This is improved version of white sugar cake and original recipe from Josephine's Recipes and published on Feb 4, 2014. Slightly sweet, super bouncy, chewy, beautiful honeycomb texture and shark fin lines. 

The easiest and quickest way to make. You don't need to prepare rice and wine yeast like traditional ones. Also you don't need to wait for a long time for fermentation. Let's give this a go and enjoy the delicious taste and bring back the child memories. 

Makes 1 - 6 inch round pan

Ingredients 
80g rice flour
80g water
60g sugar
80g-85g hot water
1/2 teaspoon sugar
1 tablespoon water
1/2 teaspoon dried yeast

Pour cold water in the pan, steam over medium heat for 30 minutes.

The secret to achieving a soft yet crunchy crust is all about getting the right balance of fresh ingredients and mastering the baking process. Get ready to enjoy every bite of that delicious pizza crust! It's the best recipe for Hawaiian pizza, hand kneaded. My husband's favourite pizza bread. Have warm, homemade pizza bread from scratch on your table in less than 3 hours and fresh out of the oven.

Ingredients:
(A)
140g bread flour
1/2 teaspoon, 2g dried yeast
14g granulated sugar
100g cold milk
1/2 teaspoon avocado oil or 10g/15g salted butter, softened
---First fermentation for 30 minutes, after shaped the buns, second fermentation for another 30 minutes---.

(B)
Toppings
Homemade tomato sauce or ketchup
Mozzarella and cheddar cheese
Sweet and juicy pineapple chunks
Homemade chilli oil or tabasco if you like spicy
Basil leaves for garnish or some pesto sauce

All you need to do to preheat the oven for pizza is to turn on your oven empty. Press PIZZA 200C for 11 minutes, repeating if necessary, After then, place the pizza in settings the time - 180C, Bake for 7-8 minutes.

Cake in 5 minutes with 1 egg only! You will bake this cake every day. Incredibly delicious! ่‘ก่„ๅนฒ่›‹็ณ•็š„ๅšๆณ• CC ๆ‰“้–‹ไธญๆ–‡ๅญ—ๅน• ✅

Looking for a quick and easy freshly made cake? Give it a go and let me know how you love them? The most delicious raisin muffins ever! Crunchy outer crust, moist and buttery on the inside. If you like raisins, extra 10-15g mixed fruits when you eat it the texture is full of fruits.

Ingredients:
1 whole egg, free range
25g golden granulated sugar, optional
25g whole milk
20g salted butter
50-60g cake flour (It's worked either ones).
1/4 tsp baking powder
a pinch of salt
35-50g flame raisins (It's worked either ones).
1-2 teaspoons honey

Method:

1) Whisk 1 egg and 25g granulated sugar until lots of bubbles on top.
2) In a saucepan, add 25g milk, 20g butter and a pinch of salt, and cook over medium low heat for a few minutes. Keep an eye on it.
3) Add half of the cake flour to make a cooked dough, and then another half flour and egg mixture, then add 1/4 teaspoon baking powder.
4) Mix all together until smooth batter.
5) Rinse flame raisins, drain and stir with a teaspoon of honey.
6) Spoon cake mixture into paper cases and raisins on the cake top.
7) You do not need to preheat the air fryer oven. Press cake icon, 130C and bake for 20 minutes and then press air fryer 150C bake for 10 minutes. (Most air fryer oven 130/150C bake for 20 minutes).

1lb loaf cake, just doubled the recipe, 150C bake for 35-40 minutes.

Coconut Cream Buns Recipe ๆคฐ็ตฒๅฅถๆฒนๅŒ… ้ฃŸ่ญœ

 

Truly enjoy the freshest bread whenever you want it at your comfort home cafรฉ.

Makes 4
Dough Ingredients:

120g bread flour or plain flour
50g cake flour, low gluten flour
1 teaspoon, 4g dried yeast
2 teaspoons milk powder or skip it
130g cold milk
15g granulated sugar
a pinch of salt
a teaspoon of vegetable oil or 15g butter

Topping:

a handful of sweetened desiccated coconut

Cream filling:

125g unsalted butter, softened
2 tablespoons sweetened condensed milk
Butter and sweetened condensed milk. It is light, silky, fluffy, incredibly delicious, and pipes beautifully.

First fermentation for 30 minutes, after shaped second fermentation for another 30 minutes.
---No preheat the air-fryer oven, high fan 150°C and bake for 15 minutes---.

REAL Pandan Chiffon Cake Recipe๐ŸŒฟ ็ญ่˜ญๆˆš้ขจ่›‹็ณ•


Ingredients:

(A)
Pandan leaves (6 pieces, 30g) 
Water 150g

If the pandan leaves are grown by yourself, wash the leaves with clean water to get rid of any dirt. Store bought needs to be soaked in salt water for 15 minutes. 

(B)
2 egg yolks, large
30g coconut milk
30g pandan juices
40g cake flour  
1/2 tsp baking powder
20g avocado oil or any mild vegetable oil
 
(C)
2 egg white, large
1/2 tsp lemon juice or 1/4 tsp cream of tartar
40g granulated sugar

Bake in a preheated air fryer oven 150C for 40-45 minutes.

Cherry Vanilla Ice Cream Recipe

Ingredients:
(A)
100g whipping cream
80g whole milk
12g granulated sugar
1/2 vanilla pod
Cook for 25 minutes in medium heat

(B)
1 egg yolk
12g granulated sugar
Whisk until double volume.

Directions:  
Add hot cream onto the custard mixture.
Cook on medium heat for 15 minutes, keep stirring until the mixture is a bit thick. Beware not to cook too long in medium heat. If not it will leave a mixture resembling fine curd. Allow the mix to cool completely. Place in the freezer for 30 minutes. Whisk until double volume. Cover with cling film freeze for 1-2 hours. Whisk again until creamy. Sprinkle dried cherries, cover with parchment baking paper and cling film. Freeze for 12-24 hours until it's completely frozen
take it out and serve (for 2 persons) only. You can double, triple all the ingredients. My perfect recipe is low in heavy cream, low in sugar. creamy, chewy texture real vanilla ice cream. I hope you enjoyed it as much as I did making it. Homemade ice cream makes me happy :) so yummy!

Japanese Souffle Cheesecake ่ˆ’่Š™่•พ่ตทๅธ่›‹็ณ•


INGREDIENTS @JosephineRecipes
35g light Philadelphia cream cheese
25g salted butter 
50g whole milk or whipping cream
35g cake flour or corn flour
2 egg yolks
2 egg whites
a few drops lime or lemon juices
35g granulated sugar or powdered sugar

No preheat air fryer oven 120C, bake for 70 minutes. If the top isn't brown, you can bake for another 3-5 minutes, switch on high fan 150C.

70g cold milk (if adding full cream milk, no oil or butter needed).
7g granulated sugar

First and second fermentation the dough for 30 minutes to 1 hour in a warm place, but not too warm. No preheat air fryer oven 150C and bake for 12-15 minutes.

360g cream cheese
150ml whole milk
3 tablespoons sugar
4 egg yolks
5 tablespoons cake flour
5 tablespoons corn flour

Ingredients B
4 egg whites
8 tablespoons sugar
You will need two 6-inch round baking pan. Line with the prepared round of parchment paper in the bottom and the sides and grease with butter.

24 Hours Homemade Soft and Fluffy Milk Bread Recipe

Ingredients:

(A)
120g, 1/2 cup whole milk
25g, 2 tablespoons bread flour

Making Roux. Begin making the roux by heating the milk in a saucepan over medium heat. Once the milk is hot enough, Add bread flour into it and quickly stir until thicken and smooth paste forms. You will make about 120g milk roux or a little more.

(B)
120g milk-roux
70g, 7 tablespoons cold milk
1 whole egg
20g, 2 
tablespoons sugar
12g, 2 
tablespoons  milk powder
240g, 11/2 cup bread flour
45g, 5 
tablespoons cake flour
5g, 1 tsp dried active yeast
25g, soften butter
a pinch of sea salt or 1/4 tsp normal salt

(C)
1 whole egg, small
2 tablespoons cold milk

Whisk the whole egg and milk together to create a glaze that is shiny and golden brown in colour and brush some butter or golden syrup on hot buns to give the crust a super shine.

Bread dough method:
1) In a large bowl, Add the milk-roux, cold milk, whisked egg, sugar, milk powder, bread flour, cake flour and yeast. mix well.

2) Kneading the dough by hand, about 10 minutes. Adding soften butter and sprinkle a pinch of sea salt. Push the dough up and down, beat until no longer stick to your hands or the work surface.

3) Place smooth dough in a lightly greased, large mixing bowl. Cover tightly with plastic wrap and place in upper or second or lower rack of refrigerator overnight. Allow to cold rise or you can rise in the warm place for 1 hour until triple in sized. (Don't let the temperature too warm and reaches 45°C, It will killing the yeast).

4) When risen. Punch down the dough and transfer the whole dough to a floured work surface. Use a kitchen scale for calculate the ''whole dough'' and divide the weight by the number of pieces you want.

5) Forming it into a ball. pressing it down and roll into a long shape or whatever you like.

6) Place the dough onto a baking tray and rise again for 1 hour in the warm place until double in sized. Ideal rise temperatures are between 35°C. If it's a winter day, the common problem is that dough won't rise. Using a warm oven by turn your oven on and off or with boiled water on the underneath to help your dough rise perfectly.

7) Just before your bread go in the oven, lightly brush egg wash on breads. Bake in no preheat oven 150°C for 25 minutes. Everyone's oven is different, you have to adjusting the temperature and baking time.

8) Remove from the oven and transfer to a wire rack. Serve warm, leftovers can keep in the zip-lock bag and eating them straight the next day. no need re-heat, the cool bread is still very soft, spongy and yummy!

Japanese Soft Milk Bread ็‰›ๅฅถๅๅธ /้บตๅŒ…ๅˆถไฝœ

The softest, fluffiest bread you will ever eat. Using quick and simple milk roux method that keeps baked breads soft and keep fresh for a few days without adding any preservatives. I love my morning breakfast bread, that served simply with salted butter, smoked German cheese, fried eggs and ham.


Makes 2
1 lb Loaf Tin, 15 x 9 cm (6" x 3.5")

Ingredients

(A)
• 120g, 1/2 cup, hot milk
• 25g, 2 tablespoons bread flour

(B)
• 70g, 7 
tablespoons cold milk
• 1 whisked egg
• 30g, 3 
tablespoons sugar
• 2 
tablespoons, 15g milk powder
• 4g, 1 teaspoon dried yeast
• 300g, 2 cup bread flour

 (C)
• 1 tablespoon olive oil or 20g butter as you prefer
• a pinch of sea salt or 1/4 tsp normal salt

Bread dough method:
1) In a frying pan or saucepan, heat milk, until the milk is warm to hot, then add bread flour. quickly stir until thicken and smooth paste forms to make a milk roux, then add cold milk, whisked egg, sugar, dried yeast, bread flour and stir.

2) Kneading the dough by hand, about 10 minutes. Adding oil a little bit at a time, push the dough up and down, beat until no longer stick to your hands.

3) Place smooth dough in a lightly greased, large mixing bowl. Rise in the room temperature for 1 hour until triple in sized. Ideal rise temperatures are between 35°C. (or allow to cold rise: cover tightly with plastic wrap and place in upper or second rack of refrigerator overnight).

4) When risen. Transfer the whole dough to a floured work surface. Use a kitchen scale for calculate the ''whole dough'' and divide the weight by the number of pieces you want. Pressing it down and roll into a three rectangle.

5) Place the dough onto a baking tray and rise again for another 30 minutes to 1 hour in the warm place until double in sized. Ideal rise temperatures are between 35°C. If it's a winter day, the common problem is that dough won't rise. Using a warm oven by turn your oven on and off or with boiled water on the underneath to help your dough rise perfectly.

6) Bake in no preheated oven 150°C on a lower rack and bake for 35 minutes. Everyone's oven is different, you have to adjusting the temperature and baking time.

7) Remove from the oven and transfer to a wire rack.

Soft and Fluffy Milk Bread Buns Recipe


Very easy and quick Japanese milk bread recipe, bake up incredibly soft and less chewy. There's nothing like the homemade aroma wafting through the kitchen as it bakes.


Makes 12
463g whole dough
38g each dough or makes 1 (2lb) loaf

Ingredients

(A)
260g bread flour
180g cold milk
1 tsp, 4g allinson yeast
30g granulated sugar

(B)
20g, butter, soften

Method: 
1) In a bowl, add bread flour, cold milk, dried yeast, and granulated sugar, stir until just combined. Knead the dough until smooth and elastic about 10 minutes, and springs back when pressed on with your fingers and is no longer sticky.

2) Transfer the kneaded dough to a greased bowl, rise in a warm oven for 1 hour. Divide the dough into 12 pieces. shape into a round balls. place them on a prepared tray and second rise again for another 30 minutes. Sprinkle some flour over the top before baking.

3) Bake in preheated oven 150°C for 18 minutes. no preheat air fryer oven, bake for 15 minutes. Everyone's oven is different, you have to adjusting the temperature and baking time.

Helpful Tips:
1) Yeast is best stored in the refrigerator, as the fungud in it will be killed at high temperatures. Before using yeast check the production date and storage life of your yeast. Refrigerate it as soon as possible after each use. The main cause of bread falling to rise is bad yeast.
2) Store a bread in an airtight bag or airtight container and keep fresh for 2 days. 
3) The best way to store bread for freshness is in the freezer for about 1 month. after defrost the bread, reheating and serve, tastes like fresh-baked. 
4) It's recommended to use an oven thermometer.
5) If it's a winter day, the common problem is that dough won't rise. Ideal rise temperatures are between 35°C-37°CUsing a warm oven by turn your oven on and off or with boiled water on the underneath to help your dough rise perfectly.

A new way to bake bread! Nobody will believe you did it!


Here's A Tuna Bread Recipe

Dough Ingredients:
120g bread flour
50g cake flour, low gluten flour
1 teaspoon, 4g dried yeast
2 teaspoons milk powder
130g cold milk
15g granulated sugar
a pinch of salt
a teaspoon of vegetable oil or 15g butter

Filling:
1 small can of tuna chunks in sunflower oil
mayonnaise or salad cream
a pinch of black pepper
mozzarella cheese slices, 2 in pieces
crispy seaweeds for decorations

First fermentation for 30 minutes, after shaped second fermentation for another 30 minutes.
---No preheat air-fryer oven, high fan 150°C and bake for 15 minutes---.

Fail-Proof Pizza Dough & Soft Cheese Garlic Bread Recipe

Slightly crispy crust, super cheesy and buttery garlicky soft and tender centre. It's so delicious served in warm and so satisfying to see the cheesy garlic bread pull apart.

Ingredients:

(A) 140g bread flour 1/2 teaspoon, 2g dried yeast 14g granulated sugar 100g cold milk (if adding full cream milk, no oil or butter needed). 1/2 teaspoon mild olive oil or 10g/15g salted butter, softened ---First and second fermentation for 30 minutes in a warm place, but not too warm--- Sprinkle some flour on top and slashing the dough with a sharp knife.

My Favourite Way To Make Garlic Bread ่’œ้ฆ™้บตๅŒ…็š„ๅšๆณ•


Slightly crispy crust and buttery garlicky soft and tender centre. It's so delicious served in warm or even cool completely.

Ingredients:

(A) 140g bread flour 1/2 teaspoon, 2g dried yeast 14g granulated sugar 100g cold milk (if adding full cream milk, no oil or butter needed). 1/2 teaspoon mild olive oil or 10g/15g salted butter, softened Some white sesame seeds for the top. ---First fermentation for 30 minutes, after shaped the buns, second fermentation for another 30 minutes---. ---No preheat air-fryer oven, high fan 130/150°C and bake for 20 minutes---. EASY Fluffy and Soft Banana Rose Cake ๐ŸŒน


My absolute favourite, healthy version of banana cake recipe! I don't think I'll ever grow tired of it, it's so fluffy, soft, moist and just tastes perfect. This works best with super-ripe bananas. It's fluffy and moist, wonderfully light in texture.

hether you're in a hurry, these classic banana cakes and baking favourites will always have a place in our homes. I absolutely love a nice, fluffy banana cake – it's one of my most favourite cakes to bake.

Makes 6 inch x 2 inch round pan or 1lb loaf pan

Ingredients

(A)
30g salted butter, room temperature
a pinch of sea salt. or skip it

(B)
3 tablespoons, 38g granulated sugar. optional

(C)
100g cake flour
1/2 tsp baking powder
1/4 tsp baking soda

(D)
1 whole egg
1 tablespoon, 12g/15g whole milk or evaporated milk.

(E)
1 overripe banana, 85g/100g, do not use under-ripe banana for baking. overripe banana make it more richer and tasty! 

(F)
1 banana cut into a slices and decorations

Method:

1) In a bowl, spoon about 30g butter and a pinch of salt in a warm oven.
2) Add 38g sugar, stir it together until creamy.
3) Continue to add 100g pre-sieved plain flour or cake flour.
1/2 teaspoon baking powder, 1/4 teaspoon bicarbonate of soda.
4) Crack one whole egg, and 1 tablespoon, 12g/15g whole milk or evaporated milk.
5) Use a fork or masher to press down the bananas until well mashed.
6) Pour the batter into the prepared pan. 
7) No preheat air fryer oven 150°C for 30 minutes.

EASY Fluffy and Soft Steamed Bun (Char Siu Bao Recipe)



To make the char siu fillings

1) Heat the oil in a frying pan over medium high heat and add the red onions. stirring constantly, until lightly browned and fragrant. Add the char siu, continue to stir-fry, and seasoning a tablespoon oyster sauce, less than 1/4 cup of water, add the corn flour mixture and golden granulated sugar or any cane sugar as you prefer. stir fry until they are evenly.

2) Switch off the heat and set aside to cool completely. It's easy to make corn flour mixture to thicken the sauces. In a small bowl, add 2 tsp corn flour with a little bit of water and mix until combined. Leftovers can be packed individually for quick ready fillings for steamed or baked buns or used for stir fry noodles, fried rice, etc. 

Makes 8 steamed buns (Small)
125g cake flour / plain flour 
1/2 tsp dried yeast 
1/4 tsp baking powder 
75g cold milk 
12g granulated sugar 
a pinch of salt 
a tsp vegetable oil 

Hand knead -  Combine all the ingredients and mix well, knead the dough until smooth. rise until doubled. punch down and shape. 

1) Place all the ingredients into the bread pan, except vegetable oil.

2) Let the bread machine do all the mixing and kneading. about a teaspoon to a tablespoon vegetable oil can be added in the middle part of kneading, or after finished kneading as you prefer. 

3) Press the menu button until you reach ''ferment''. The bread maker will allow your dough to rise for 30 minutes giving the dough more depth flavour or until beep to signal and then you take it out of the machine.

4) Turn the dough out onto a greased or floured surface, punch down the dough, cut into four, roll each ball with a rolling pin and roll up then add fillings.

5) Place on the steamer. Second fermentation the buns in cold water steamer, turn on the heat to medium very low for 15 minutes (winter). If in (summer) You don't need a ''second rise''. Fill the base of the wok with cold water, put a bamboo steamer in the wok, steam on medium high heat for 15 minutes. Serve hot and enjoy!

My New Favourite Bread To Make ❤️ BAKERY SECRET ❗️


This white and black sesame seeds, checkerboard pattern bread, bakes up the top of bread super crunchy like a biscuit and soft inside, absolutely perfect for afternoon tea with a cuppa of tea or cappuccino, I'm sure you will love it!

Best Homemade Fresh Bread ๐Ÿž Everyday For Afternoon Tea


 Makes 9

Ingredients:
120g bread four
50g cake flour or
170g plain flour, but less chewy.
1 tsp dried yeast
130g cold milk
15g granulated sugar
2 tsp milk powder or skip it
a pinch of salt
1/2 tsp mild olive oil or
10g/15g butter

Important Notes:
First and second fermentation the dough for only 30 minutes in room temperature.

No preheat air fryer oven 150C, lower rack and bake for 12-15 minutes, sit in the oven for 5-10 minutes.

Makes 1

Ingredients:
(A)
140g bread flour
1/2 teaspoon, 2g dried yeast
14g granulated sugar
100g cold milk
1/2 teaspoon mild olive oil or 10g/15g salted butter, softened

First fermentation for 30 minutes, after shaped the buns, second fermentation for another 30 minutes.

(B)
Filling:
30g light cream cheese
1 teaspoon, 5g granulated sugar

(C)
35g raisins, soaked in water and drain

(D)
Topping:
10g whisked yolks
2 teaspoons, 12g sugar
8g plain flour / cake flour
10g salted butter, softened

No preheat air-fryer oven 130/150°C and bake for 30 minutes.

[NEW METHOD] Super Moist and Fluffy Banana Cake Recipe

Need a yummy treat that's easy to make? This is absolutely the best banana cake I've ever had! It's great for using up overripe bananas, what are you waiting for? Get the oven on! Let's bake this perfectly crisp on the outside, and soft and fluffy on the inside, and so flavourful and delicious!

Makes 1 - 1lb loaf tin or 6 inch round pan (6 inch x 2 inch)

(A)
1 banana 85g/100g
a pinch of sea salt
1 whole egg, medium size
38g granulated sugar

(B)
100g cake flour
1/2 teaspoon baking powder
1/4 teaspoon bicarbonate of soda

(C)
12g/1 tablespoon milk
30g/35g salted butter


Method:
1) In a bowl, add 1 banana 85g/100g, a pinch of salt, 1 whole egg and 38g sugar over the top of banana and use a masher to press down the banana until well mashed.
2) Whisk the egg and continue to add 100g premium plain flour or cake flour, 1/2 teaspoon baking powder and 1/4 teaspoon bicarbonate of soda.
3) In a saucepan, add 1 tablespoon milk about 12g and 30g/35g butter, medium heat for 1-2 minutes, keep an eyes on it in. 
4) Pour into the cake mixture while is warm. mix all together until smooth batter.
5) No preheat air fryer oven, 150°C and bake for 30 minutes.

Homemade Hawaiian Pizza | Pineapple and Ham Pizza Recipe


Ingredients:
(A)
145g cake flour / premium plain flour
1/2 teaspoon dried yeast
1/8 teaspoon baking powder
100g cold milk
10g granulated sugar, optional
1/2 tsp mild olive oil or any mild taste of vegetable oil
or just skip it, it's worked perfectly too.

Hand knead -  Combine all the ingredients and mix well, knead the dough until smooth. rise until doubled. punch down and shape. 

1) Place all the ingredients into the bread pan, except vegetable oil.

2) Let the bread machine do all the mixing and kneading. about a teaspoon of vegetable oil can be added in the middle part of kneading, or after finished kneading as you prefer. 

3) Press the menu button until you reach ''ferment''. The bread maker will allow your dough to rise for 30 minutes giving the dough more depth flavour or until beep to signal and then you take it out of the machine.

4) Turn the dough out onto a greased or floured surface, punch down the dough, roll with a rolling pin and add toppings.

(B)
Toppings
Homemade tomato sauce or ketchup
Chilli oil if you like spicy 
Mozzarella and cheddar cheese 
Sweet and juicy pineapple chunks, if not sweet, add sugar and mix well until ready to use.

No-preheat air-fryer oven 180C bake for 15 minutes.
