Cherry Vanilla Ice Cream Recipe


100g whipping cream
80g whole milk
12g granulated sugar
1/2 vanilla pod
Cook for 25 minutes in medium heat

1 egg yolk
12g granulated sugar
Whisk until double volume.

Add hot cream onto the custard mixture.
Cook in medium heat for 15 minutes, keep stirring until the mixture a bit thick. Beware not cook too long in medium heat. If not it will leaving a mixture resembling fine curd. Allow the mix to cool completely. Place in the freezer for 30 minutes. Whisk until double volume. Cover with cling film freeze for 1-2 hours. whisk again until creamy. Sprinkle dried cherries, cover with parchment baking paper and cling film. Freeze for 12-24 hours until it's completely frozen
take it out and serve (for 2 persons) only. You can double, triple all the ingredients. my perfect recipe low in heavy cream, low in sugar
