The best recipe I've ever had! Easy Chocolate Banana Bread how easy it is to make at home!


One of my very best banana recipes incredibly straightforward that uses only one bowl make an easy clean-up. These yummy cakes are full of flavour, amazingly crunchy on top, soft, chocolatey, rich with its super moist texture and so easy, even kids can make them! Follow this recipe and bake like a professional baker. you can enjoy a freshly baked chocolate banana bread anytime you want and enjoy the aroma too. 

Ingredients
Makes 1 - 1 1lb loaf pan or 6 inch square pan 17cm x 17cm x 10cm

Ingredients:
95g cake flour
1/2 teaspoon + 1/4 tsp baking powder
1/2 teaspoon baking soda
2 tablespoons cocoa powder
35g salted butter, room temperature 
a pinch of sea salt
35g granulated sugar. optional
1 overripe bananas, 100g
2 tablespoons, 22g milk
1/2 teaspoon vanilla extract 
1 whole free range egg
75g/80g dark chocolate chunks

Method:
1) In a bowl, add cake flour, baking powder, baking soda, and cocoa powder. Stir until well combined. 
2) Add butter, a pinch of sea salt,  granulated sugar, overripe banana, milk, vanilla extract or skip it and egg.
3) Use a masher to press down the bananas, continue mixing until everything is well combined. Pour the batter into the prepared pan. Sprinkle some dark chocolate chips on top before baking. 
4) Bake in no-preheated air-fryer 150°C for 25 minutes or bake in oven for 30 minutes. Sit in the oven 5-10 minutes.

Homemade Chilli Garlic Sauce Recipe 蒜蓉辣椒酱


NO MSG, free of preservatives and additives. It's full of flavour and perfect for dipping sauce and stir fries. To make the dipping sauce for dumplings, wontons and spring rolls, you will need a tablespoon of homemade chilli garlic sauce, 1/2 tsp light soy sauce and 1 tsp mirin and sugar, mix it all together.
 
Ingredients
1 cup sunflower oil, rapeseed oil or any neutral oil such as peanut oil
200g fresh garlic, minced
300g red chillies
100g bird eye chillies
No sugar and salt it's worked perfectly if you like all natural ingredients.
but you still can add a tsp of vinegar, sea salt and granulated sugar instead.

Instructions:
1) In a frying pan, heat the oil over medium-high heat, add the minced garlic, fry until fragrant, and then continue fry the red chillies and bird eye chillies. 
2) Stir often for about 15 minutes. Remove from heat and let it cool completely. Pour it into a clean jar. Refrigerate and use within a month.

Helpful Tips:
Above the instructions is no fail recipe, and everyone can make it at home. When you don't use grams scale a recipe then you can just adjusting ingredients to your liking.

My Husband's Favorite Food❗ Quick and Easy Duck Hot Pot Dinner! 😋 Yummy Homemade Braised Duck 滷鸭

This juicy braised duck recipe is so tender, with a thick, gravy-like sauce and so flavourful. One of my absolute favourite dishes at home. It's perfectly served over a white rice and so comforting, so delicious and make sure you make enough as I am sure many of you will run for a minute.

Ingredients:

(A)
4 stalk spring onions, optional
ginger, cut into 8 thick slices
150g rock sugar
(or 6 tbsp granulated sugar)
5-6 cloves garlic
2 bay leaves
2 tsp Sichuan peppercorns 
(or black peppercorns)

(B)
100g light soy sauces, less than half cup 
finest brandy or rice wine, optional
2 tsp, 1 tbsp premium oyster sauce
2 tsp, 1 tbsp chu hou sauce or fermented bean curd instead
dried chillies, 8 pieces, optional or skip it
1 tsp homemade chili oil, optional or skip it
(You can adjust the spices and seasonings to suit your taste).

(C)
1 whole duck
3 cooked eggs, optional
tofu puffs, duck kidney, heart, liver and neck as you prefer
a pinch of sea salt
mild olive oil for frying
full and half kettle of boiling water

Method:
1) In a large pot, add the clean 1 whole duck, which already trim off excess fat from the duck and remove giblets, some spring onions and ginger into a casserole pan, then continue to pour hot water to a boil for getting rid of duck odor.

2) After the duck has been in a hot water bath, be careful to remove the duck and place it on a large plate. (You can rub the duck with some salt and clean it after a hot water bath) or skip it.

4) Continue repeating the process, add the duck kidney, heart, liver and neck for a hot water bath and then sprinkle some salt on it. carefully remove it and place them on a plate. 
3) In a large pan, add mild olive oil for frying and melting 150g sugar, cook on a medium heat and keep an eye on, until it browns but not burnt. It will taste bitter and burned, dispose of it no matter what it's harmful and release toxins. 

5) Lower the heat and add 5-6 cloves garlic, 6-8 ginger slices, 2 bay leaves, 2-3 stalk spring onions, 2 tsp Sichuan peppercorns or black peppercorns and stir fry for about a minute. 

6) Add the seasonings, 100g light soy sauces, less than half cup, finest brandy or rice wine, 1 tbsp oyster sauce, 1 tbsp chu hou paste, 8 pieces dried chilies and 1 tsp chili oil. You can adjust the spices and seasonings to suit your taste.

7) Place the whole duck into a large pan, pour over the sauce on top and flip it over until well combined. Carefully pour a full kettle of hot water and continue to cook and cover and braise until the duck is cooked through for about 30 minutes.

8) Add the rest of the duck kidney, heart, liver and neck and cook for another 30 minutes, add some extra hot water if the sauce reduces to half.

9) add cooked eggs and tofu puffs and cook again for another 15 minutes. Beware of cooking in medium heat not medium high or high heat. 

10) Very carefully remove the duck and the rest from the pan and transfer to a large serving plate. Set aside to cool completely and cut into pieces. strain the liquid and discard the solid and then pour the hot gravy sauce on top and eat it happily :)

BEST-EVER Air Fryer Moist & Soft Chocolate Banana Cake 🍌

Ingredients
Makes 1 - 1 1lb loaf pan or 6 inch square pan 17cm x 17cm x 10cm


Ingredients:
95g cake flour

Black Sesame Mochi Roll | Glutinous Sticky Rice Cake Recipe

One of my own version for healthy, no oil, no preservatives, less sugar and perfectly yummy snacks. I love the chewy texture, and soft as a pillow, it has a unique mouthfeel and is pretty addicting!  

Ingredients 

(A)
• 60g soya beans, optional
• 10g golden, granulated sugar, optional
or • desiccated coconut  + a pinch of sea salt

(B)
• 35g black sesame seeds, toasted
• 5g white sesame seeds, toasted
• 20g/25g walnuts or peanuts, toasted
• 40g/45g brown sugar, optional
• 40g/45g water, cooled boiled, optional
You'll need a food processor to blend all the ingredients into a paste. 

(C)
• 100g glutinous rice flour
• 20g wheat starch or corn flour
• 10g golden, granulated sugar, optional
• 140-150g water, optional
• lightly brush with mild olive oil/vegetable oil in the pan

Method (A)
1) Wash soybeans thoroughly and drain.
2) Place the soybeans on a baking pan.
3) No-preheated oven, upper and bottom fan, roast at 150C for 10 minutes. reduce the oven temperature to 0C for another 2 minutes. all the soybeans colors turned to brown and shells are crack and epidermis burst 
or you can use a frying pan on your stove top.
4) Use a small grinder, add roasted soy beans and granulated sugar to finely grinding into a powder. Store in an airtight container.

Method (B)
1) In a frying pan, add black and white sesame seeds, heat over medium high, stirring occasionally for 2-3 minutes until the seeds turn brown, glisten and occasionally pop or jump. remove pan from heat and set aside.
2) Add toasted, sesame seeds, walnuts, brown sugar and water in a food processor, turn the grinder on and let it run for a minute or so, until smooth. Ladle it into the sterilsed jars. Store it in the fridge and use the paste within a week. Above the recipe ingredients you can make 2 batches of glutinous rice cake with black sesame paste. If you double the recipe, you can make a jar of 300ml.

Method (C)
1) In a bowl, add glutinous rice flour, wheat starch/corn flour, granulated sugar, and water. Stir until well combined. Grease the pan thoroughly using cooking oil to prevent sticking.
2) Pour mixture in a prepared pan and steam over medium high heat for 20 minutes.
3) Let it cool completely. roll the dough with both hands to shape it into a long square, using cling film to prevent sticking. spoon black sesame paste, roll into a long log, sprinkle roasted soy bean flour over the top as much as you prefer. cut into 4, 6 or 8 pieces or sprinkle desiccated coconut over the top and a pinch of sea salt instead of roasted soy bean flour. Spoon the extra golden syrup over the top and enjoy!
