How to Bake a Light and Fluffy Strawberry Chiffon Cake Without Oil or Butter l 無油、全天然 l 草莓戚風蛋糕 - Josephine's Recipes Episode 127

The cake is super fluffy, soft and moist, has a strong and fresh strawberry flavor. 

For a stunning cake of your own, just follow a few simple techniques on the video instructional. 
It is homemade goodness at its very best, smells like 100% real strawberry.

Equipment Needed:

(A) Egg yolks:
• 5 egg yolks
• 4 tbsp sugar
• 100ml strawberry puree (sauce)

• 1 cup cake flour

• 2 tsp baking powder

 (B) Egg whites:

• 5 egg whites
• 1/2 tsp cream of tartar
• 6 tbsp sugar

How to make your own Strawberry puree (Sauce) To wash, rinse strawberries thoroughly under cool running water, drain in a clean strainer. Add the fresh strawberry into a blender, then blend until smooth

You'll achieve Beautiful 
& Fragrant natural light Pink sauce.

1) In a large bowl, add 5 egg yolks, 4 tbsp sugar, 100ml strawberry puree. Stir until well combined. Sift in the 1 cup cake flour and 2 tsp baking powder into the egg yolk mixture. Stir until smooth and Set aside.

2) Use a large clean bowl, Add 5 egg whites,  Add 1/2 tsp cream of tartarBeat the egg whites with an electric mixer until barmy, Add 2 tbsp sugar for 3 times, beat them to half solid until stiff peaks form. then you'll need a fine strainer slowly to fold the egg yolks batter to egg whites and mix throughly with your spatula, stir lightly until everything is well combined.

3) Gently pour the mixture into the greased 7 x 4.5-inch angel food tin, then bang it on the work surface a few times to expel any large air pockets.

4) Preheat the oven, set the temperature to 150°cBake for 50 minutes or until cooked through.

5) Remove from the oven, use a sharp knife to cut around the edges only.  Cut the base once is cooled. Let it cool and hold it up for at least 15 minutes.

Helpful Tips:

1) Simply place the fresh egg in your fridge, It will whip easier.
2) Beating egg whites is a very important process, it will help your cakes rise with perfectly.
3) Cover with foil after a few minutes if the cake of top starts to get brown 
and continue rising nicely with a golden top.
4) Pink food colouring paste to give you just the colour you're looking for.
5) Please understand that everyone's oven work differently. 
You should also check the temperature of your oven. if not, your cake won't rise well.

DIY Evaporated Milk | Made using Fresh Milk l 香濃幼滑淡奶 l 自製花奶 l Homemade Evaporated Milk - Josephine's Recipes Episode 126

口感爽滑细腻。Evaporated milk is fresh milk from which 60% of the water has been removed. you can add 1 tsp of sugar to balance of the aroma and You'll amazed the taste exactly same as store bought.

1 Litre Whole Milk
1 tsp Sugar

You'll need A 
Large pot
Milk Jug
Glass Jars

1) Preparation In a large pot,
Pour 1 litre of milk and add 1 tsp of sugar to the boil.
The goal is to reduce the quantity in the pot (which is now about 4 cups)
by approximately half (2 cups). It takes about 3 hours to reduce of liquid.

2) You could speed it up a bit if you watch carefully
Stir often.I preferred the freedom to enjoy a perfect cup of milk tea
and allowed my process to take quite some time.

3) Remove from the heat, quick sieve and allow to cool.
Place it into clean glass jar and stay in the refrigerator
no longer than 3 months.

4) Now, you can brewed some black tea, added some sugar and evaporated milk,
it tastes and smells so good. I hope you enjoy a cup of Royal milk tea.

Helpful tips:
1) Without sugar and it turned out to be an incredible.
Add a tsp of sugar can balance the taste like store bought.
2) One of my favorite drink -> Channel Island milk

Steamed Eggs With Milk Dessert 超滑的鮮奶燉蛋【推薦甜品】Josephine's Recipes Episode 125

180ml Whole milk 全脂牛奶
1 tsp Sugar 糖
1 Egg 雞蛋

1) Pouring 180ml milk into a milk pan, Add 1 tsp sugar until dissolved.
2) Beat the egg until it turn foamy, combine to (1) stir well and quick sieve
3) Cover with (oven safe) aluminium foil, pour boiling water from 
the kettle into a pan fitted and low temperature steam for 25 minutes. 
Serve hot and Enjoy!

1) 澆180毫升牛奶倒入奶鍋。加入1小匙砂糖,用勺子攪拌均勻。 
2) 雞蛋打散,直到它變成泡沫狀,只需添加 (1) 攪拌均勻,快速篩。 
3) 蓋上(烤箱安全)鋁箔,倒入熱水蒸鍋和低溫蒸25分鐘。趁熱和享受!

Traditional Grass Jelly Drinks - Cincau | 自家製涼粉 | 涼粉冰加奶 | 炼奶黑凉粉 - Josephine's Recipes Episode 124


1) 干涼粉草,洗净后,沥干水分备用。
2) 将水,放入作法1,蓋上鍋蓋,中火持续,熬煮上5小時,
3) 过滤至水壶即可熱或冷飲。
4) 将作法2的汤汁,过滤至另一锅中后,继续以小火煮开,
5) 待涼後,放入冰箱冷藏。完全成凉粉凍後切塊,

Water 水
Dried Grass Jelly 干涼粉草
(Cincau ) Leaf Grade

Agar Agar Bar 燕菜 (Follow the package directions)

Here is the method written on a card inside my bar Agar
Place 1100ml water in a pan 2. Add 2 bars (20g) agar-agar to soften.

1) Rinse and Wash the dried grass jelly.
2) Add water to (1), Cover & cook on medium-low heat for 5 hours. Add sugar to taste.
3) Sieve and pour the glass jelly drinks into a jugServe immediately when it is hot or set aside to cool completely. Put it into the fridge then pour into glasses over ice when ready to serve cold.
4) Add the remaining to another saucepan and discard any dried grass. Cut the agar agar in half, wash and rinse, then bring to boil and simmer until agar agar is completely 
dissolvedPlace the sieve over the prepared moulds, slowly pour and remove any large clumps ensuring a smooth and consistent texture
5) Set aside to cool completelyPlace it in the refrigerator overnightCut any share as you desired and Serve!

How to Make Avocado Juice | 牛油果汁 | Green Smoothie - Josephine's Recipes 123

This is definitely one of my favorite juice. Avocados are rich sources of B-complex vitamins, vitamin E and vitamin K.

1 extra large ripe Avocado
1 cup (250ml) cold Milk
4 tbsp Sweetened Condensed Milk (if desired)
12 Ice cubes (if desired)

Things You'll Need:

Drinking glass


1) With a sharp knife, cut the avocado in half vertically.
Take out the pit if desired or by gently cutting around the pit 
and Use a spoon to scoop out the pulp.

2) Put the pulp of the avocado, milk, sweetened condensed milk, 
and ice cubes in a blender.

3) Puree until smooth to get the juices flowing and the flavors combined.
