来来来!教你自家的独门配方: 炸肉云吞汤米 Best Ever: Deep Fried Crispy Pork Belly and Wonton Rice Noodle Soup 153











这个是版主的最爱,自家的独门配方: 炸肉云吞汤米,也是最花功夫的一道早餐。每次回沙巴都必吃的,家乡里的人会称它为"炸肉、炸云吞、加料加底,煮水米粉"。当然,自家出品,永远真材实料,也能够品尝出,无比的幸福。

(A)
--- 真材实料的老火汤底 ---
汤底是经过三个小时,熬成的老火汤。选用一整个2kg玉米土鸡、少许干贝、红枣、1颗蜜枣、一个大白萝卜切丁,中火熬煮而成。

(B)
--- 教你做香喷喷的馅料 ---
云吞皮一包。500g半肥五花肉,用刀剁成半泥。适量的加入2小匙海盐、2小匙鸡粉、2小匙麻油、2小匙李锦记饺子酱汁、2小匙生抽、2小匙蚝油、2大匙甜酒、2大匙葱花、2小匙姜蓉。 2小匙黄糖。搅拌直至完全混合。放入雪柜,盖上保险膜,腌制入味,至少6个小时以上。将包好的云吞,炸​​至金黄色。即成。

(C)
--- 放心制作无铝免揉油条/ 油炸鬼----
半杯40c温水,1小匙糖,半小匙酵母。盖上保险膜,直到杯的表面满满的泡沫。一个碗,放入1杯高筋面粉,1大匙海盐,1小匙小苏打粉,1小匙泡打粉。慢慢地,加入酵母水,倒入面粉中,可用搅拌器打成面团,用手揉搓会有点费时费力,最后再加入菜油,即成光滑的面团。之后,发酵两个小时,或,放入雪柜,盖上保险膜,继续低温发酵。

第二天早上,在夏天的室温,发酵面团,发至两三倍大。不一定要提前一天发面的,当天发也可以,只要时间充足,就可以了。工作板上,抹油,手上也要抹油,将面团在板上,用棍按压成,长方形。分成四,六,八片。

之后,两面条叠在一起,用刀子在中间压扁。油锅起热,下油条炸,边炸边翻。最后把炸好的油条,剪成段,放在汤头里泡一泡,吃起来很特别。

(D)
--- 腐乳汁炸肉 ---
500g半肥五花肉,3大匙南乳汁,3大匙甜酒,3大匙李锦记海鲜酱,3大匙豉酱,蜜糖适量。放入雪柜,盖上保险膜,腌制入味,至少6个小时以上。将薯粉,撒入腌制入味的五花肉,拌均匀,备用。热油锅,炸至金黄色,捞出即成。待凉切片,装盘即可。

(E)
--- 随个人喜好,可选用米粉、河粉、或者各式各样的面条---
煮好一锅热水,将主料煮成八成熟,装碗,放入以上所有的配料,最后倒入热汤,撒上葱花和炸香的红葱头。大功告成!

Dim Sum in London | Wing Yip Tai Tung Chinese Restaurant

I have been there so many times. Some dishes are always keep the high standard on the
quality like 鲜虾肠粉 炸两肠粉 泰式酸辣凤爪

They are also my favorite and the inspiration dim sum. 
but some of the dishes not as good as before, like 沙律明虾角、金牌糯米鸡、潮洲粉果。

The best dim sum in localbut not as good as before and it's not the best dim sum in London.

T- Bone | Rib Eye Steak | Corn on the cob | Coleslaw | Fries Chips | Mashed Potatoes | London Trip












Amazing Steak Restaurant - Great Food, Large Portions, Go hungry! It was my first visit to an Angus steakhouse even though I have been in London a few years. The place is quite good looking, and the food is quite good. We were pleasantly greeted on arrival By the beautiful hostesses in red. great food and lovely service. the total cost was not so high for London standard prices, well worth it. Can't wait to come back again.

T- Bone £25
T-Bone aged for 35 days and cooked on the bone to impart the rich flavor 
the T-bone is a hearty steak with fillet on one side of the bone and strip loin on the other.

Rib Eye Steak £20.75 
Cut from the rib section, the rib eye is the most tender and juicy of all the steaks. 
It has a rich smoky flavour and is guaranteed to satisfy even the most dedicated carnivore.

Dim Sum in Manchester | Wing Yip Glamorous Chinese Restaurant


















Great atmosphere and Service not that bad. but as a chinese foodiethere were not what I expected, not truly dim sum and the quality just so so. Anyway, Good value for money.

How to Make Super Crispy Rice Treats 十分钟做出儿时的美味零食 米花糖的制作全程 小米酥 Josephine's Recipes 149

The absolute best crispy treats. Since my husband encourage me to make my very own healthy snacks instead buying from Chinese groceries store. 

Makes 12 Pieces


You'll Need
22cm Stainless Steel Saucepan
30 x 20 Non Stick Oven Tray
Spatula
Baking Paper
(Non Stick Roll)

Ingredient:

4 tea cups Rice Krispies (80g)
1 tea cup Mixed Nuts 
(Cashews, Walnuts, Almonds, 
Hazelnuts, Macadamia and Pistachio) 
*Add raisins to your liking
1/2 tea cup Sesame Seeds, toasted
2 tablespoons Maltose 
2 tablespoons Sugar 

Method:

1) In a saucepan over medium-low heat, lightly grease with 1 tsp butter, add 2 tbsp sugar, 
and 2 tbsp maltose until melted and smooth.
2) Place 1 tea cup of mixed nuts, cook for a minute, add 4 tea cups, 80g rice krispies, and stir to combine. Line with baking paper. Sprinkle the base with sesame seeds. Spoon the mixture into prepared pan. Cover with baking paper, using hands, press firmly the parchment down around the sides. 
3) Sprinkle over the sesame seeds and Preheat oven to 150c and bake for 10 minutes. Set aside to cool at least 25 minutes or until firm. Cut slice into squares. 

Helpful Tips:

1) Store the homemade crispy rice cookies treats in zip seal bags can keep fresh for 3 - 5 days.
2) Do not increase the heat to medium high or high heat. 
3) Your oven will not be exactly the same as mine, so you will need to adjust yourself. Different temperatures in different ovens.
4) Keeping a close eye on it.
5) Sugar syrup, Honey can be replace to Maltose.
*Brown or cane sugar can replace to a regular sugar.
6) You can use 1/2 tea cup Peanut and sprinkle with desiccated coconut or Roasted chopped Hazelnuts instead of 1 tea cup of mixed nuts and sprinkle with white and black sesame seeds. I made all these ways, so I have different types and the Best ever Crispy Rice Cookie in various versions.

''Homemade Salted Duck Eggs'',  in just a few easy steps by following these instructional video.
One of my favourite breakfasts is rice porridge with a salted eggs, side dishes or used them to making chinese sticky rice dumplings (zongzi), are traditionally eaten during dragon boat festival (duanwu) and many other chinese traditional dishes.

Ingredients:
10 duck eggs
1 cup salt 
3 cups water
5 star anise
3 bay leaves

Things You'll Need:
A Clean Container
Saucepan

Method:
1) First, Carefully place the duck eggs in a container. 
2) In a saucepan, add hot water, salt, star anise, and bay leaves, 
Bring to a boil and stir until the salt are dissolves.
3) Set aside to cool completely. 
Pour salt water into container until all covered.
4) Leave in fridge or in a cool, dark place for 30-45 days.

Helpful Tips:
After 1 month, the best way to take one out, and test whether the duck eggs are salty enough.
if not, let the rest to brine until you're satisfied. The salted duck egg yolks turns a gloriously rich ball of sunshine orange red in colour and very rich flavor.

Homemade Salted Eggs | The Simplest, Easiest Method EVER | 教你如何做自制咸鸡蛋 - Josephine's Recipes 151


Here is super basic, super simple, super easy recipe and great for everyone!
Follow every steps, there's no way you fail and have a good understanding, 
you should reach to achieved in this method.

One of my favourite breakfasts is rice porridge with a salted eggs, side dishes.
or used them to making chinese sticky rice dumplings (zongzi), are traditionally 
eaten during dragon boat festival (duanwu) and many other chinese traditional dishes.



Ingredients:
Brandy Wine
Salt
Eggs

Things You'll Need:
Zip & Seal Food Bags / Clean Glass Container

Method:
1) Coat the egg with brandy wine.
2) Then roll it in the salt until it's covered all over.
Continue with the remaining.
3) Place the egg in a zip lock bag and lock it 
or on a clean glass container, and cover the lid.
4) Leave in fridge or in a cool, dark place for 1 - 3 months.

Helpful Tips:
After 1 month, the best way to take one out, 
and test whether the eggs are salty enough.
if not, let the rest to brine until you're satisfied.

The salted egg yolks turns a gloriously rich ball of sunshine
orange red in colour and very rich flavor.
