花生湯圓 (燙麵法) Tang Yuan | Glutinous Rice Balls with Peanuts & Sesame Seeds - Josephine's Recipes Episode 133

































因讀者的要求下,就將它寫成華語食譜,放在博客上。希望能幫到大家。一般來說,當你揉或搓粉團的時候,都會很容易散開,包餡料時,會裂開。湯圆粉團也都要很快的速度包好,不然被空气吸收,而会變的很乾燥,很難包的好,要一直不停的點水。

這個燙麵法,是花了不少的功夫研製出來。暫時是最好的方法,只希望大家,在家也可以輕松做,也是簡易操作的。口感很Q,很滑口。同樣的做法也能做成好吃的糯米滋。

花生湯圓(燙麵法)

A 湯圓(燙麵法
1杯~糯米粉
1/4杯~澄麵粉
2大匙~糖
半杯~滾水
1大匙~粟米油

B 餡料:
半杯~ 咸脆花生
2大匙~ 白芝麻
35克~ 牛油
2大匙~ 糖粉

以上的
花生和芝麻要炒香和攪碎。

C 湯水:
2杯~水
3湯匙~黃糖
2片~老薑
2大~紅棗
1~蕃薯

1)鍋內加水,
將全部湯水材料,用中火煮20分鐘即可。

以上的
花生和芝麻要炒香和攪碎 + 牛油 + 糖粉,揉圓。

全做法:
1)將滾水,糖,倒入澄麵粉拌均勻。份量請看A 湯圓(燙麵法)。
2)加入糯米粉,用筷子揉拌。帶上手套後,加粟米油搓均勻。
3)保鮮紙打開一層,放入己搓好的粉團讓它成形。放入冷藏能保存3-5
要煮時,從雪櫃拿出來,就可將粉團分成6(大)或 12(中)等份。
每粒粉團按扁,包入餡料,揉成圓球狀。煮滾一鍋熱水,大火煮至浮起,
然後盛出,加入已煮好甜湯一起享用。

Potato Chicken Stew with Curry | 薯仔咖喱雞 | Malaysian Chicken Curry - Josephine's Recipes Episode 132




































This is the best chicken curry I have ever made, really aromatic, and easy to prepare ahead and is good one in Seasonality table. Absolutely Perfect! Wishing you a merry Christmas. I hope you have some laughs today. Here's hoping you have some luck finding something you like in this instructional video.

Ingredients
1 Big White & Red Onions
1000g Gressingham Corn Fed Poussin / Chicken
12 Tesco Finest Elfe Potatoes
12 Fried Tofu Puffs
18 Fresh Okra

Oil for frying

Seasonings:
Dried Chilli into flakes
( Can be made as hot as desired)
2 tbsp Hot Chilli Powder
2 tbsp Hot Curry Powder
2 tbsp Soy Sauces
1 tbsp Maggi Liquid Seasoning
1 Cup Clear Water
200ml Thai Taste Coconut Milk
3 Thai Kaffir Lime Leaves
3 Bay / Curry Leaves
1 Lemon Grass Stick


Method:
1) In a Casserole, Heat the oil and fry the onions over a medium heat.
2) Add the potatoes, chicken and simmer for further 5 minutes.
3) Season with dried chilli flakes, hot chilli , curry powder, soy sauces, and maggi liquid seasoning.
4) Add kaffir lime leaves, bay/curry leaves, lemon grass stick, water and continue simmer until the meat are half-cooked.
5) Add the remaining ingredients, fried tofu puffs, and okra. pour the coconut milk to taste and simmer until tender as you desire. Serve with boiled rice, or noodles.

How To Deep Fried Tofu Puffs | Fried Beancurd | 油炸豆腐卜豆腐朴 豆腐泡 - Josephine's Recipes Episode 131






While deep-fried tofu is super crispy on the outside, dense and creamy inside. 
You can see when you cut them open the tofu is like a spongy exterior
Which soaks up all of the soup's goodness.

Here's how to achieve 

to Making your own Tofu Puffs:

Directions:
1) Remove the tofu from its packaging, 

discard the liquid around the tofu. 
Sprinkle salt on top, then wash and drain.

2) Cut the tofu into cubes

and deep fry until golden brown. 
180c for about 5 minutes.

When the tofu puffs are added in curries and stir fries, They can soak and taste like heaven.

This is Fried Chinese Crullers, YouTiao, Yu Char Kuih, 
Yau Char Kwai, and also known as Chinese Breadsticks

More fun to have a vendor make it for you right in front of your eyes. 
Since I have my first bite of youtiao, it was so crispy and tasty.

One of my favourite places for breakfast in town. Service is always great, friendly and attentive. They have delicious deep fried pork with chewy noodles in soy sauces or soup, and any type of various mixed fish. I particularly enjoy and It's always a treat.

Seafood & Fish Markets in Sandakan, Sabah | The World's Cheapest Street Markets - Pasar Tanah Merah, Bandah Nam Tung / Batu Sapi 山打根市石咀巴刹

       I must visit this market when I back to my hometown in holiday   
   Superb selections of any type of seafood, fish or even vegetable and fruit    
     However, It's worth a visit not for sightseeing but to pick up some wonderful produce    

 You can ask to smell any fish to make sure ''It's Fresh''.
  Overpowering smell of, you guessed it, fish!   
The freshest fish is sold here, and the experience is fantastic.
The sellers holding 8kg fish, about RM280

They usually sell a bit high bargain.

 1 kg  RM4.00 - You'll probably find it a lot cheaper than you imagine.     


   Highly Recommended for Seafood Lovers. Reach early to pick up the best bits. 
They will give you a special deal.
You can buy them for a lower price. If you learn this language. '' Boleh Kurang Dikit Kah '' ?
