     Ingredients (A) Egg yolks:
     • 3 egg yolks
     • 2 tbsp sugar
     • 1 tbsp strawberry puree
     • 2 tbsp milk
     • 1/2 cup cake flour
     • 1 tsp baking powder

     Ingredients (B) Egg whites:
     • 3 egg whites
     • 1/2 tsp cream of tartar
     • 3 tbsp sugar

     For the Topping:
     Clotted Cream Cornish Ice Cream
     Freshly sliced strawberries,
     for garnish, optional

Banana Chocolate Chip Bread | Banana Chocolate Chip Loaf | | 巧克力香蕉麵包 | 香蕉蛋糕 Banana Cake - Josephine's Recipes 16




Freshly Baked 刚出爐 

Cool Completely | Sweet Bites 
The best traditional banana cake. The quickest and easiest way to get perfect results every time.

Ingredients:
50g lurpak salted butter
1/2 cup castor sugar
2 eggs
1 tsp vanilla extract
2 tbsp evaporated milk
2 bananas
1 cup plain flour
1 tsp bicarbonate of soda  
1 tsp baking powder
2 tbsp dark chocolate chips 

Method:
1) Use a fork to mash the peeled 2 bananas in a bowl. Add 50g cream butter and half cup of sugar, stir until light and fluffy.

2) In another bowl, add 2 eggs and 2 tbsp evaporated milk, Gently pour in (1) and keep stirring together until well combined.

3) Mix 1 cup of plain flour, sift together with 1 tsp bicarbonate of soda and 1 tsp of baking powder. Fold in 2 tbsp dark chocolate chips until just combined. Pour batter into prepared loaf tin. 

4) Preheat the oven to 160°c, Bake for 40 minutes or until cooked through.

5) Remove from the oven. Use a sharp knife to cut the cake. carefully wiping it clean after cutting each slice and serve.

Helpful Tips:
Everyone's oven is different and the best way to adjust yourself. Since my old oven only the lower elements heat up, so it took about an hour to bake. I recently bought a new fan oven which have heating on both top and bottom for 35 - 40 minutes.

How to Make Puff Pastry Egg Tarts l 酥皮蛋撻 l Dim sum - Josephine's Recipes Episode 129


























Puff pastry can be bought ready made on the market and didn't take much time. but it does require some techniques and attention to detail. Here's a video instructional when you want a quick, light flaky pastry egg tarts and isn't difficult to make at home also one of my favourite and the most 
awesome custard I have ever tasted. 

Oven:
Temperature: 150°C

Makes 8 - (65mm) tart mould / 25 minutes
Makes 4 - (100mm) tart mould  / 35 minutes

Ingredients: 

(A)
Tesco puff pastry block 500g

(B)
1 egg + 1 egg yolk 
40mll icing sugar
100ml hot water
65ml evaporated milk
1 tsp vanilla extract

Method:
(A)
To make puff pastry:
Instructions: Take out from fridge 30 minutes before use. 
Remove all packaging. 

Roll out on a slightly floured bench and cut out as required. 
Place in the middle of a tart mould and chill it overnight.

(B)
To make custard filling: 
1. Add 40ml icing sugar into 100ml hot water, mix until completely dissolved.
2. Whisk 1 egg + 1 yolk with 65ml evaporated milk. Pour in (1) sugar water and mix well. 
Sift egg mixture to get rid of any foam into a measuring cup. Add 1 tsp vanilla extract to enhances 
flavours, and extra taste. Pour the egg mixture into each tart shell. 

Helpful Tips:

Leftovers puff pastry can be kept in the refrigerator for 3 days.

How to Make Fluffy Avocado Chiffon Cake l Homemade Angel Food Cake | 牛油果戚風蛋糕 | 雪芳蛋糕 - Josephine's Recipes Episode 128
















If you really want to experience a delicious down to earth chiffon cake, then here you can learn this super fluffy and beautiful cake.

Equipment Needed:

Wilton 17.78 x 11.4 cm (7 x 4.5-Inch) Angel Food Tin

Whisk, Bowls, Strainer, Spatula, Brushes, Spoons and Blender.

Ingredients:
(A) 
Egg yolks:
• 5 egg yolks
• ½ cup sweetened avocado juices

• 1 cup cake flour

• 2 tsp baking powder

 (B) 

Egg whites:
• 5 egg whites
• ½  tsp cream of tartar
• 6 tbsp sugar

Method:
1) First separate the eggs, putting the whites into one bowl and the yolks into another bowl. 
Add 5 egg yolks and ½ cup sweetened avocado juices. Stir until well combined. Sift in the 1 cup of cake flour and 2 tsp baking powder into the egg yolk mixture. Stir until smooth and Set aside.

2) In a large clean bowl, 5 egg whites, 1/2 tsp cream of tartarBeat the egg whites with an electric mixer until barmy, Add 2 tbsp sugar for 3 times, beat them to half solid until stiff peaks form. then you'll need a fine strainer slowly to fold the egg yolks batter to egg whites and mix throughly with your spatula, stir lightly until everything is well combined.


3) Bang it on the work surface a few times to expel any large air pockets. Gently pour the mixture into the greased 7 x 4.5-inch angel food tin, then bang it again.


4) Preheat the oven to 150°cBake for 50 minutes or until cooked through.


5) Remove from the oven, Let it cool and hold it up for at least 15 minutes.

use a sharp knife to cut around the edges and the base once is cooled.

Helpful Tips:
IMPORTANT!
1) Simply place the fresh egg in your fridge, It will whip easier.
2) Beating egg whites is a very important process, it will help your cakes rise with perfectly.
3) Cover with foil after a few minutes if the cake of top starts to get brown 
and continue rising nicely with a golden top.
4) Green food colouring paste to give you just the colour you're looking for.
5) Please understand that everyone's oven work differently. 
You should also check the temperature of your oven. if not, your cake won't rise well.
