Ingredients:
280g red chillies
67g / 1 large garlic
129g ginger root
8 tbsps vineger
8 tbsps water
(cooled boiled water)
4 tbsps sugar

Method:
1) Place the chillies in a large bowl. Sprinkling some salt over them. Rinse thoroughly and drain.
2) Roughly chopping the red chilies, garlic and ginger, transfer them to a blender, add sugar, vinegar and water. then blend or pulse until smooth. Pour into a clean jar, seal, and refrigerate. Use within 2 weeks.
Notes:
As you desired amount of sugar and adjust seasoning to taste.
