The Best & Healthy Almond Cookies - No Fail Recipe


This recipe yields one batch of delicious almond cookies.

Ingredients
3 egg whites (small) or 2 (L)
4 tablespoons, 45g granulated sugar, optional
1 tablespoon cornflour
50g flaked almonds

How to Make the best and healthy almond cookies, no fail recipe for sure! Today, I will guide you through making a thicker version one batch of delicious almond cookies, which are crispy on the outside and chewy on the inside.

After perfecting this recipe over ten years and more than a hundred attempts, I can confidently say it’s the best one yet.

Start by separating the egg whites from the egg yolks, then whisk 3 small or medium egg whites or 2 large egg whites, with the 4 tablespoons, about 45 grams of sugar and 1 tablespoon of cornflour, you can use plain flour or cake flour, whisk until you achieve a thick, creamy consistency.

Transfer the mixture to a baking pan lined with a reusable baking sheet to prevent sticking, and sprinkle on your desired amount of almond flakes.

There’s no need to preheat the oven; simply set it to 130°C with the fan on and bake for 20 minutes. Slice the almond cookies into your desired shapes while they are still warm. For a chewy texture, make sure the batter is thick; one batch will suffice for this recipe. If you prefer a crispier, non-chewy cookie, go for a thinner batter, which can yield up to three batches of the lighter version.

千錘百鍊 炸空心油條 Fried Youtiao - Crispy Hollow Fried Dough Recipe

Today, I’m excited to show you again how to make crispy hollow fried dough, which is also called Youtiao. This recipe is super easy to follow. It’s a different from what you might expect regarding ingredients, shaping, frying oil, and the entire process.

There are no weird flavours involved; they stay crispy even after the fried bread dough cools down. It is also have a soft and chewy interior with a hollow honeycomb structure.

Spring has finally arrived, and my wonderful husband Italy Paul, known for his Italy Paul art, has gathered 32 gorgeous tulip flowers from our garden to fill two large vases. The table looks so much more appealing and festive now!

These tulips, if freshly picked from the farm, cost £1 each. It’s a bit expensive, but I totally get that the farmer works really hard, so it’s absolutely worth it.

(This recipe yields 8 pieces)
In a bowl, combine 90 grams of cold milk, 2 teaspoons which is 12 grams of sugar, half teaspoon about 2 grams of dried yeast, and one hundred twenty five grams of cake flour or you can use plain flour instead, mixed with half teaspoon of baking powder. On the side, add 1/4 teaspoon of salt, but make sure not to mix the salt directly with the baking powder and yeast.

Mix all the ingredients in a bowl, or use a bread maker instead for convenience way, to knead the dough and let it ferment by using the dough setting about at 30 to 45 minutes until you hear the signal that it's ready to be shaped. If you are not hurry, keep in the fridge for one more hour.

You can also use plain flour for this recipe; but to use cake flour, it will stay really soft on the inside even after it cools. On the other hand, if you use bread flour, it’ll be extra chewier because of the high gluten content.

If you have any leftover fried breadsticks, simply keep them in an airtight container in the freezer. When you're ready to enjoy them, no need to thaw—just throw them directly into the air fryer or oven to heat up and pair them with rice congee, which is the best!

If you prefer them plain, it's ideal to consume them on the same day. Frozen fried breadsticks that are reheated can only be served with rice congee or soup noodles.

It's easy to shape the dough like this way, Let it rest for second fermentation at least 15 minutes to an hour before deep frying. If you want the texture with hollow inside it’s important to enough fermentation, a basic secret!

In a pan, pour in some olive oil for frying (not the salad kind. This is the best cooking oil I've found so far, for frying, cooking, and baking).

Medium high heat, for at least 3 minutes, one by one dough on the oil and use a chopstick to move on the dough to make it puffs, keep an eyes on it, until they puff up and turn golden brown.

Beware your hand are all dry, no water, it’s dangerous if any water drop onto hot oil. There’s no smoky oil taste, good control your frying temperature, wear sunglasses to not hurt your eyes, the kitchen also less greasy feel, make sure kitchen is all window open and good ventilation.

Now you can make your own, crunchy, airy fried bread dough, which is what youtiao means in Chinese. Drain them in kitchen paper, if you don’t know to clip chopsticks then don’t use it.

My absolute favourite way to enjoy plain and see the textures while eating and with sencha or jasmine green tea or it’s perfect to eat fried breadsticks cut into pieces and put over the topped with rice congee for a brunch, my favourite for a delightful treat!

Crispy Fried Banana Fritters 🍌 No Fail Recipe


Ingredients
Batter
60g plain flour
40g rice flour
2 tsp sugar, optional
1/2 tsp baking powder
1 egg yolk or skip it
20g salted butter, melted
90g-100g Water

Are you a fan of this type of fried banana? It's an extremely popular snack found in Asian street food. Today, I’m excited to share my Secret Crispy Fried Banana with you! It is no fail recipe for sure. These bananas stay crispy even after cooling down.

For this batter recipe, you’ll need 2 or 3 snack-sized bananas. Start by mixing 60 grams of plain flour, 40 grams of rice flour, 2 teaspoons of sugar, half a teaspoon of baking powder, and 1 free-range egg yolk (or you can skip it if you prefer). Add 90 grams of water, and if you’re omitting the egg yolk, use 100 grams of water instead. Whisk everything together, and don’t forget to include 20 grams of melted butter.

Stir until all the ingredients are well blended.

In a pan, pour in some olive oil and heat it on high for about 4 minutes. You can slice the banana in half or cut it into 3  as shown in the video.

Take each banana slice carefully, as they can break easily. You can make whole banana fritters or keep them in halves to form a square shape like in the video. Deep fry the bananas on high heat, keeping an eyes on it.

Use wooden chopsticks or heatproof tongs until the bananas turn a lovely golden brown. Drain them on kitchen paper, and be cautious not to use overly ripe bananas, as they can become too soft while frying. This thick batter version ensures the fried bananas remain crunchy even when they cool down, but they’re definitely best enjoyed warm. Now, just look at those beautiful, crunchy fried bananas!

France’s MOST BEAUTIFUL Red Train Ride to the Glaciers


It's an unforgettable journey in Chamonix. You must visit Montenvers - Mer de Glace - Ice cave! Take a ride on the Little Red Train to the Sea of Ice - Refuge du Montenvers. Experiencing the Montenvers Train and the Mer de Glace, the largest glacier in France. Prepare for an exciting 20-minute journey on the famous little red cogwheel train to the renowned Mer de Glace and its ice cave. No other train, Uber, or car can access this location. It may be snowy up there, but surprisingly, it’s not colder than the summit of the Aiguille du Midi. The ticket for the Mer de Glace Adventure: Train + Gondola + Ice Cave
For the two of us, that totals 100 euros, and it’s absolutely worth it.

What is the name of the glacier in Chamonix? It is known as Glacier la Mer de Glace, situated in Chamonix-Mont-Blanc. The Mer de Glace is created from the glaciers of Leschaux and Géant. It is the largest glacier in France, extending 7 km in length, covering an area of 40 km2, with a thickness of 200 m, and is located at an altitude of 1913 m. The charm of the Montenvers site enchants us even before our arrival. Every 30 minutes, the little red cogwheel train transports you to an elevation of 1913m from Chamonix!

We decided to spend a night at the 4 star hotel Refuge du Montenvers because we wanted to experience staying on the glacier and fully immerse ourselves in the mountain ambiance. I will guide you through the hotel, showcasing both the exterior and interior, including a tour of the room.

Breakfast is included in the package, and the prices are surprisingly not overpriced, contrary to what we might expect. Please note that the red train is not included. The daily rates vary, with our classic refuge double room priced at £220 for free cancellation and £180 for a non refundable option. We received a very warm welcome and found the room to be spacious and extremely comfortable, offering a magnificent view.

It felt like stepping back into the 19th century with its vintage style. However, the room had no kettle and no hairdryer, and it was a bit chilly.

No worries, though; we always bring our travel kettle on holiday, as having hot water and tea is essential for us. As for our room, there is no TV and no room service, so you can't order anything to your room. You have to head down to the restaurant if you’re hungry, but at least WiFi is included.

Wow, just take a look outside! The views are absolutely stunning and leave you speechless. We made ourselves some really warm lightly fragrant jasmine green tea and settled by the window, watching the snowflakes fall alongside the breath-taking mountain scenery. It feels like a scene from a movie!

We're really happy, and it definitely helps keep our minds in a good place. It's such a magical experience that we love to dive into again and again! The heavy snowfall outside our window is absolutely stunning. We're a little concerned though because the red train has stopped selling tickets for tourists on their official site.

Luckily, we discovered during breakfast that all hotel guests and staff can arrange to hang out in the area after checking out. This way, we can all head down to the city of Chamonix; otherwise, our plans would be totally messed up!

If you're thinking about staying overnight at Refuge du Montenvers, it's best to avoid taking risks in the last couple of days. If the weather turns bad, the red train might get cancelled, and you'll have to wait for better conditions. If you're in a rush, it's smarter to just grab a one-day pass and stay in the city of Chamonix.

I will show you a tour of the breakfast buffet area; this is what it looks like. The breakfast is not bad and not good either. You can boil your own egg but it is just so so, not as fresh as what you’d expect as free range golden egg yolks, We had visited to the Champery village in Switzerland and the boiled eggs are super yummy if you have watched our breakfast review video last month, the breakfast there are really amazing!

There are freshly made orange, mango and apple juices, and yes, it's sour in taste. also there are no good quality teas to choose from, unlike other four-star hotels in Chamonix. There is no sencha tea, no green tea, no black tea. The waiter said they only have homemade teas, which taste weird. so drinking hot water is fine. but since they come with the hotel package, it’s not a big deal!

Overall, it’s neither great nor terrible; at least the chocolate croissants are freshly baked, and I really liked the pain au chocolate, eating two of them and feeling somewhat full afterward. When I took a bite, it was still warm and soft, like it had just come out of the oven. The pain au chocolate has a nice crispy outside and a fluffy inside.

After breakfast we make our favourite jasmine green tea and take a moment to enjoy the view one last time before checkout time approaches. If you are curious about the specific type of jasmine green tea we brew everyday after meals, just ask. This isn't a promotion! It's genuine my favourite teas that I want to share with you all, it really helps lift our spirits.

\The World's Best Hollow Fried Dough - Josephine Recipes

Today, I'm going to teach you how to make a hollow fried bread dough. This is a healthier version and it’s not what you might expect when it comes to the ingredients, shaping, frying oil, and the entire process.

There are no weird flavours here; it’s crispy on the outside and soft and hollow on the inside. The magic is in the dough itself, along with the right fermentation and frying temperature.

(This recipe makes 8 oval-shaped pieces).
You can double or triple it to make more if you want.


In a bowl, mix together 90 grams of cold milk, 2 teaspoons (which is 12 grams) of sugar, half a teaspoon (about 2 grams) of dried yeast, and 125 grams of cake flour combined with half teaspoon of baking powder.

Makes 8 Oval Shaped
90g cold milk
2 tsp /12g sugar
1/2 tsp dried yeast
125g cake flour
1/2 tsp baking powder

You can either mix everything in a bowl or use a bread maker for convenience to knead the dough. Let it ferment using the dough setting for about 30 to 45 minutes until you hear the signal that it's ready to shape.

After that, let it rest for a second fermentation for at least 15 minutes. If you're not in a rush, it's fine to let it ferment for up to 30 minutes!

You can easily make your own cake flour at home with just two ingredients; check out the video recipe link in the description box below. Using cake flour ensures that when the fried bread dough cools down, it remains crispy on the outside while still being soft and pleasantly chewy inside. Shaping the dough is super easy this way. The oval shape looks great.

In a pan, add some olive oil for frying (not the salad type. This is the best cooking oil I've discovered so far for frying, cooking, and baking). I set a timer for 15 minutes for the first round of frying the bread dough. My cooking hob ranges from low 1 to high 9. Heat the pan on medium-high at '7' for 3 minutes, then maintain that medium-high '7' for another 3 minutes while deep frying. After that, switch to medium heat '5'. It's best to adjust the heat if you don't have a thermometer; cover the pan just in case, and keep an eye on it until they puff up and turn golden brown. Be careful, your hands should be dry—no water, as it’s dangerous if any water drops into hot oil.

If you’re not sure how to use chopsticks, don’t attempt it (use heatproof clips instead for easier handling; if the fried breadsticks dough falls into the hot oil, it can hurt you and create a mess).

There’s no smoky oil flavour, and you can control your frying temperature well. Wear sunglasses to protect your eyes, and keep the kitchen feeling less greasy by ensuring all windows are open for good ventilation. Now you can make your own crunchy, airy fried bread dough.

Frying with olive oil is seen as a healthy cooking option. It holds up well at high temperatures due to its high monounsaturated fat and antioxidant content, which helps it resist oxidation better than vegetable oils. It boosts nutrient absorption and stays nutritious even after being heated.

And yes, Olive oil it’s pricier but it is also high quality is the strongest and healthiest choice. It is reuse safely: Olive oil can be reused more often than other oils because of its stability. Beware don't overheat!

Perfect for Breakfast - My Healthy Way to Make Crispy & Tasty Youtiao 油条 Hollow Fried Dough Recipe (Fried Breadsticks)!


Today, I am going to teach you how to make healthy and tasty Youtiao. This is healthy version, different from what you might expect in terms of ingredients, shaping and frying oil and process, and trust me, there are no weird flavours, it's crispy on the outside and soft and chewy with a honeycomb texture that's a bit hollow inside because it’s enough fermentation and frying temperature are a key.

Soft and Fluffy Steamed Buns - Red Bean Bun Recipe


Let's make incredibly soft and fluffy steamed buns, filled with delicious sweet red bean paste. The steaming time varies based on size; these mini buns weigh around 27-29g each.

Ingredients
90g cold milk
2 tsp / 12g sugar
1/2 tsp dried yeast
125g cake flour
1/4 tsp baking powder
or you can skip it

In a bowl, add 90 grams cold milk, 2 teaspoons it is 12 grams caster sugar, half teaspoon of dried yeast and 125 grams cake flour mix with 1/4 teaspoon baking powder or you can skip it.

Combine all the ingredients in a bowl to mix and knead, or use a bread maker for the same process. Then, let the dough ferment for 30 minutes. Once the dough has doubled or tripled in size. Take the dough out and shape it.

Whenever I make red bean soup, I always prepare a little more than I need. This way, I can blend it into a fine consistency and then simmer it in a pan to thicken it by evaporating some moisture and adding sugar to achieve the perfect sweetness.

These buns are incredibly soft and fluffy, filled with sweet red bean paste. You can use the same bread dough for steaming, deep frying, or pan frying. I'll demonstrate that in the next video. After shaping, let it rest for 15 minutes in the steamer on low heat, then steam on medium-high heat for 15 minutes. This will yield 8 small pieces. This is my all-time favourite bread dough that I've been using for 20 years, and this is the improved version. Try out this recipe; I bet you'll really enjoy it, and it's super easy to make. Plus, you won't have to buy the frozen buns from the grocery store anymore.

Chamonix Mont Blanc Valley - Le Savoy for Beginner Ski Areas


On our first day arriving at the La Folie Douce hotel, I'm super excited to head over to check out the beginner ski slopes. I'm so happy to see so many people there, even with the heavy snowfall and the freezing cold.

Le Savoy is a great spot for a morning boost. The only slopes open are Le Savoy, which are safe for beginners. I’m feeling super happy and energized, even though I’m just getting over a cold/flu that lasted more than three weeks. Thankfully, I still have some energy left!

I've definitely gotten better this time around, falling less often because I focus on keeping my weight centered over my front foot, bending my knee, and looking in the direction I want to go. Keeping my weight on the front foot helps me stay in control, since leaning back can make the board turn uncontrollably.

Italypaul uses edge control to steer and manage speed instead of just skidding. Always look ahead, concentrating on your destination rather than just your feet. All the ski slopes are shut down due to freezing temperatures, strong winds, and nonstop heavy snowfall, making it really cold and risky on the mountains, especially when it’s below 12C. When I'm totally drained and just collapse next to the tree area, it's snowing heavily, super cold, and really windy too.

My hands are freezing, but as I watch everyone snowboarding, skiing, and the kids laughing—so adorable! As a second-time snowboarder, my goal is to fall less. I keep practicing because it feels great to try new things, and snowboarding is not just an awesome workout but also a super fun sport!

It’s just a short walk from our hotel, La Folie Douce 4 star hotel, are well-known for their prime locations right on the ski slopes, providing ski in and ski out access along with a vibrant après-ski scene. I'm beginning to really love snowboarding. As a newbie, I'm just trying to enjoy it in relaxed settings, without any stress.

My goal is to stay upright and have a blast. It gives me a sense of pride and makes me feel pretty awesome. It makes me happy. I genuinely enjoy taking in the scene around me. Paul has been ill for over two weeks, but he has completely recovered. My immune system isn't the strongest, but I am now in my third week of recovery. I only have a slight cough due to the frigid weather.

I reach out to film Paul as he snowboards lap after lap, having a great time watching him. I can't help but keep my eyes on him, secretly hoping he falls, just so I can get a good laugh! How to Make Perfect Dumpling Dough - Easy Dumpling Wrappers / Skin Recipe 自制饺子皮 做法和窍门

How to Make Dumpling Dough, Dumpling Wrappers, also referred to as Dumpling Skins Now, let’s get started. Using a bowl to mix and knead by hand or a bread maker simplifies the process significantly.

Ingredients
1 cup cake flour
1/2 cup hot boiling water
1 tsp olive oil (for frying and baking not for salad)

Start by adding 1 cup of cake flour, a half cup of very hot, boiling water, and a teaspoon of olive oil suitable for baking and frying (not the kind used for salads). Feel free to use this same recipe to double or triple the quantity.

Creating your own dumpling wrappers is definitely the best option; this homemade dumpling recipe is simply outstanding. Additionally, it’s a much healthier alternative when you make it yourself. You know exactly what ingredients are included, with no preservatives like those found in store-bought varieties.

I’ve been using this dumpling wrapper dough for over ten years, and I ensured it was 100% satisfying before I documented the complete recipe and shared the video.

I didn’t just test it once or twice, but multiple times to refine it. I also apply the same technique for making green onion pancakes, noodles, beef pies, and lasagna.

To begin, you will need cake flour. You can easily create your own cake flour at home by mixing plain flour with corn flour. Be sure to check the video description box for the link to the recipe on how to make cake flour.

This recipe makes 50 medium sized dumplings, so if you double it, you’ll have 100, and if you triple it, you’ll end up with 150 pieces.

My husband enjoys making extras and storing them in the freezer for quick ready to eat, pan fried or boiled dumplings, which are perfect for brunch or late-night snacks.

These are homemade dry dumpling noodles, which are also eggless wonton noodles. How to Make Chinese Pan Fried Buns 脆皮冰花 水煎包


How can you make the bases of buns and dumplings extra crispy and add a lacy skirt? This video shows you how to create a crispy lacy skirt for your buns and dumplings.

As food lovers, we all love chili oil and crispy fried shallots, which are essentials in our comfy home, don’t you think? Especially when they’re made from scratch. They truly add an extra addictive touch to every dish.

They are my absolute favourite. These snacks are absolutely delightful! When you're looking to relax, just make some rice porridge and enjoy it with these fantastic crispy bao or dumplings.

It will surely boost your mood and give you that warm feeling of home. I absolutely love making bread and dumplings; it is so therapeutic. I almost do it everyday at home. There's nothing quite like the satisfaction of creating it from scratch.

As for the chewy meat balls, I will also include that in the next video, so if you’re interested, keep an eye out for it!

Start by adding oil to a pan and heating it to medium-high. Place the buns in the pan and cover it with a lid for 3 minutes.

In a small bowl, mix 1 teaspoon of flour (you can choose from cornflour, potato starch, plain flour, bread flour, or rice flour). I’ve found that using just one teaspoon of corn flour with a rice bowl of water works well, or you can mix bread flour with rice flour for a super crispy result without needing much oil.

Keep the heat at medium-high. Cover the pan and steam until the water has evaporated. Once the water has evaporated, turn off the heat and let them cook for another 2-3 minutes to make sure the bottom is golden-brown instead of just soggy.

Swiss Breakfast with Mountains Views in Switzerland

The views from our balcony are absolutely stunning. It's like a dream. We decided to upgrade to the Privilege suite for our last day because it’s expensive, but definitely worth it at £500 for one night.

The suite has a balcony and terrace that give you an amazing view of the stunning Dents du Midi mountain range.

The hotel staff are always cheerful and super accommodating. This breakfast tray is incredibly heavy. When I lift it, it strains my waist, causing discomfort at night. A heads up to everyone here, you really need to be careful with how you handle such heavy stuff.

The wooden tray is heavy; it may be stable, but it's surprising just how heavy it is. But those wonderful ladies are just fantastic!

Maintaining a long-term relationship can be tough, but it's crucial to do things together, even if it's just sitting in silence while soaking in the beautiful views and sharing breakfast. We all know that, life is short, so let's concentrate on what we cherish, enjoy our time, and keep in mind that self-love is essential, isn't?

We totally love these free-range golden egg yolks. I prefer my fried eggs a bit runny, served on a slice of bread, and every bite is just amazing. The boiled egg, also half-cooked, is simply delicious. It’s straightforward but really high quality, just like it was picked fresh this morning from the farm's hens. I'm addicted to Jasmine green tea; the view of the Swiss Alps and a pleasant aroma of Jasmine green tea really boost my mood. 

It's a wonderfully floral tea that smells and tastes extraordinary. Once again, it is really, really lift my spirits. Oh, Thanks for joining us for breakfast today!

100% 原味蛋撻 Original Egg Tarts Recipe

If you’re not satisfied with your homemade egg tarts, this recipe you must need to give it a go! It’s tasty and healthy version, less butter, and custard are heavenly smooth, cookie are so addictive. all is in fresh ingredients and taste really out of the world!

Makes 4 small tarts
—- 2 medium large
—— 6 inch one
Double the recipe make 8 pieces
31-32g each dough
Cookie Dough:
35g butter - 70g butter
10g brown sugar - 20g sugar
40g plain flour - 80g plain flour
35g potato starch - 70g potato starch / almond flour

Add all ingredients in a bowl, sit in the warm oven for a few minutes.
After shaped, place in the freezer.
Custard:
115g-130g milk
40g sugar
1 large egg

Now let’s get started!
In a bowl, Add 35g butter, and then add 10g sugar, if it is hard to stir, simply place in the warm oven for a few minutes to soften and combine well with the sugar.

Then add 35g plain flour, and 35g potato starch or almond powder can be replaced if you don't have potato starch. Add all ingredients in a bowl, and sit in the warm oven for a few minutes, and then you can shape into the tart moulds easily.

The dough should resemble these. Split it into 4 pieces, and just roll them into balls. Use my thumb to press the centre a bit thicker, then gently press all the edges. Shape it a little higher, like the video shows you, above the tart mould. This way, when you pour in the custard filling, it can be higher, and when you take a bite, it’s not just a little custard but a full, smooth egg custard with a crunchy cookie base and edges.

After shaping all 4, pop them in the freezer until you’re ready to use them, at least 10 minutes in the freezer and within 7 days as suggested.

You can also double or triple the tart dough and store it in the freezer, again, within the 7 days as recommended.

--- See this, I doubled the cookie dough recipe, so I can make 6 of these fancy higher version of egg tarts. Whenever you're in the mood for egg tarts, you only have to prepare the custard for the filling, it's super easy and you can enjoy freshly made egg tarts at home, they're so tasty and come right out of the oven.

In fact, this step by step video are recorded 2018, all of them are 8 years old videos which I am now have time to edit it. This YouTube channel I will edit in the same day quick recipe video or old videos that I recorded before. My every recipe is unique, differently from others, my own way, because I’ve use a lots of time and energy for experimenting and I make sure you guys no fail and taste the difference, it’s always healthy and tasty version, it’s a satisfying from making to eating is a happiness taste of home.

Now, we’re making the custard! In a saucepan add 115g milk, add 40g sugar until dissolved. Set aside until cool or nearly 40C to 50C temperatures. Whisked 1 egg and combine well together. I prefer golden egg yolks, free range eggs, the colour is perfect golden yolks and beautiful custard without adding the orange colour like some bakery shop did. Pour over the tarts. It must preheated oven 180C for at least 10 minutes. Wear gloves and sunglasses for safety precautions. Put the egg tarts for 180C for 18 minutes. I used air fryer oven, if use the built in beko or traditional oven must be different you are the one understanding your own oven to bake it perfectly. The cookies dough can make just sprinkle chocolate chips, mixed nuts to make chocolate cookies or sprinkle raisins or oats to make your own healthy cookie or just sprinkle coconut flakes to make a coconut cookies.

傳統煎年糕 🍳 Pan Fried Nian Gao with Eggs

How to Pan Fry Nian Gao with Eggs. This is one of my all-time favourite snacks. Start by cracking a free-range egg into a bowl, then use a fork to whisk it for about a minute until it looks like this – that’s what we call whisked egg.

Next, grab some scissors to cut the Nian Gao. It’s still soft enough to cut with scissors since this Nian Gao was made just yesterday. This homemade Chinese New Year cake has no oil and is less sweet, but it still has a nice balance of sweetness and a perfect texture. You can eat it as is without frying; it tastes like coconut toffee mochi, and it’s super delicious too.

I prefer to pan fry it with eggs, so let’s go through my step-by-step process. Cut it into thin slices to get more servings, but if you want that chewy texture, you can cut it thicker.

Taking it out is really easy; just use scissors, and you’ll see that the stainless steel bowl won’t stick together, right? Be careful when using a sharp knife to slice it; you can try both thin and thick cuts to see which one you like better.

Heat up the pan and spray a little oil on it. I’m not a fan of too much oil because it can feel greasy. Cover the pan to heat it and the oil quickly, then dip the Chinese New Year cake in the egg, placing each piece into the pan one by one. Fry until the base is half cooked, then separate them and fry both sides until they’re done. Don’t overcook them, or they’ll turn dry or burn. Even if the Nian Gao cools down, it’s still tasty.

It actually tastes better than when you reheat it, so keep in mind that reheating will change the texture and flavour. ''

Traditional 20 Years Old Chinese New Year Recipes


This is an oil-free, unsweetened yet aromatic version of CNY rice cake.

(Makes 4)
125g gula Melaka
35g dark sugar
450g water
260g glutinous rice flour
60g rice flour
(Medium high heat, steam for 1 hour).

Today, I'm excited to share my 20-year-old unique recipe for Chinese New Year cake with you all. It's really easy to make, all you need is glutinous rice flour and some rice flour. If you don't have rice flour on hand, you can just use the same amount of glutinous rice flour instead.

You just need two kinds of sugar: gula melaka, which has a traditional shape and is authentically made in Malaysia. You can buy it online from Asian grocery stores for about £3.

You can also grab it on Amazon for 6 pounds, delivery included. It really has that nostalgic, authentic gula melaka taste. As for dark muscovado sugar, I always go for Billington's brand because it tastes the best in the UK so far.

You can substitute half a cup of brown granulated sugar for a caramel and toffee flavour, and of course, it should be Billington's brand.

In a saucepan, add 125g of gula melaka and 35g of dark muscovado sugar. You could also use one piece of Chinese brown sugar to replace 125g of gula Melaka.

Bring it to a boil over medium heat, then add 450g of water. Cook until the sugars are completely dissolved.

In a bowl, combine 260g of glutinous rice flour with 60g of rice flour, then pour in the syrup water and mix until you have a smooth batter. If you don't have rice flour on hand, you can just use the same amount of glutinous rice flour instead. The reason I add rice flour is that it helps the cake be less soft and gives it a nice chewy bite.

For the steamer, fill it with enough water and steam it on high heat for about 5 minutes to warm the bowl and prevent sticking. Next, divide the batter into 4 stainless steel bowls and steam them on medium-high heat for one hour.

I've had great success with this in my many New Year cake recipes, but this particular recipe is my go-to for being easy, flavourful, delicious, and addictive.

If you're not satisfied with your homemade rice cake, give this a try. I am sure you will become addicted to it. You can enjoy it right after steaming with chopsticks, or the next day, just cut it into pieces with scissors to savour that coconut and toffee mochi taste, or fry it with eggs. It's my favourite to pair with jasmine green tea or homebrew coffee.

You can make a healthy and yummy homemade Chinese New Year cake for someone special. Just put the cleaned red dates on top, steam it for another 5 minutes, and you're all set!

Mont Blanc Chamonix Aiguille du Midi in the French ALPS


The thick snow blanketed my hat, black hair, scarf, coat, and everything else, but I want to make it even more dramatic, like the dream look I've always envisioned for myself.
Today at Aiguille du Midi in France, brace yourself for extremely cold, freezing weather with lots of snow.

Take a ride on the world's highest cable car to enjoy the amazing views of French alps. It's snowing heavily today. Unfortunately, we can't take in the sights from the glass walk, but we'll definitely come back again.

We secured our tickets online earlier for the 10:10 am trip to the summit of Aiguille du Midi. The reservation and round-trip tickets for two came to about £150.

Everyone in line is taking their time, super polite, and the staff is really helpful too. But the sky is all cloudy and very cold, and it's heavy snow. The following day, we found out it was going to be closed for a week while they updated the website. How lucky we are!

This was my first time here, and I had a really great experience. Honestly, I'm not really into sports, but now I feel like I want to walk more and explore the outdoors instead of just staying at home.

As we climb the stairs, it gets tough to catch our breath when we finally reach the top. Usually, I take off one glove, keeping one hand free to shoot videos. When the pain kicks in and the cold feels like tiny needles poking my skin, I hurry back inside to shield myself. Then, I sit down, press my cold hand against my warm skin, shut my eyes, take a deep breath, and just wait until my hand warms up to a comfy temperature. It requires teamwork with your partner, and it takes a lot of energy. So, we all need to stay healthy.

My mindset is shifting after my recent surgery and the let downs from multiple treatments, which I prefer to keep private. So, I'm changing my perspective now. This was my first time here, and I had a really great experience. I want to spend time with my loved ones, each and every day, and cherish those moments together! 

We visited Aiguille du Midi café called CAFETERIA, where I ordered two cups of hot Jasmine green tea and settled in for some relaxing moments. The staff asked us to pay upfront for 9 euros, then we realized they were using cheap paper-cups. They should definitely inform customers about that before taking payment; it feels like a tourist trap.

For the same price, you could enjoy tea served in stainless steel or ceramic pots with cups, plus they would refill your hot water a second time in Chamonix city, just a short distance away. We had high expectations and never imagined it would turn out to be a tourist trap.

Anyway, it's an experience worth sharing. We're still filled with joy and unforgettable memories from seeing the top of Aiguille du Midi, surrounded by heavy snow and the stunning scenery we had always dreamed of.

Breakfast with A Mountain Views in Switzerland


Today is the third day of our breakfast journey. Honestly, we’re not morning person, but when we’re on holiday, we wake up early, especially for a luxurious breakfast with views of the Swiss Alps.

If you saw our first breakfast buffet video in last few days ago, this is actually the second one we’ve enjoyed, but we opted for different choices to try out and they also look great too.

This is Dark wholemeal bread, which has an oats and caramel flavor and is crunchy like a biscuit. It's not fluffy or soft; it's just like a crunchy biscuit, but it's healthy bread. This bread is crunchy on the outside, medium soft on the inside, and has a fruity taste.

Today, we're excited to give the Swiss cheese a go and see how it tastes, along with the smoked salmon. Boiled eggs are a must-have, super fresh, just like they came straight from the farm hens. Oh wow, this is a moment that will leave us in awe, as we've never experienced anything like this before. We love how our breakfast looks on the table and the views is really amazing!

Every morning, the breakfast area feels like a dream, with scenes that seem unreal. We've been here for 4 days, and we get to enjoy 3 breakfasts with views of the Swiss Alps in Champery village.

Swiss Breakfast with A Views - Switzerland’s Mountain Villages

We have finally arrived at Champery village in Switzerland. We spent four days and three nights at the Hotel National Resort and Spa. There is a breakfast area, as well as options for lunch and evening snacks.

Oh wow, looking out the window, we have breakfast with a view! The glass house has a panoramic 360-degree window where you can clearly see the Swiss Alps and a big clock nearby. This four-star hotel provides a five-star experience in the Swiss Alps, it is an luxurious escape from home.

A reception area and a lounge, with a classy piano over there. Plus, there are plenty of windows and great lighting all around, along with beautiful chandeliers. The hotel feels so clean and cosy inside. The Swiss hotel national's team is super friendly and really helpful; they always make us feel welcome and happy to be here.

Good morning! Today is our first day of breakfast, and I will guide you through the breakfast buffet.

There are various types of bread available, including croissants and pain au chocolat, which contains chocolate inside. On the left side, you can find cold foods such as butter, ham, salami, and smoked salmon slices, yogurts and fruits while the right side features hot dishes like sausages, bacon, and scrambled eggs.

I sliced two pieces of French bread and toasted them, making sure to adjust the toaster to medium heat and keeping an eye on it for about three minutes.

The waitress inquired about my drink preference—coffee or tea. I opted for two cups of Jasmine green tea, which is of exceptionally high quality. We offer three varieties of juice: orange juice, apple juice, and grapefruit juice. Grab a fresh whole apple and a pear to seeif there's any difference between those found in the UK. Additionally, it's beneficial for maintaining our health to make sure we stay well-hydrated.

We have Swiss free-range eggs that you can boil to your liking. We boiled ours for three and a half minutes, and they came out just right, with golden yolks that are absolutely tasty. Furthermore, there is a table featuring a variety of cereals and homemade jams, allowing you to choose your favourite selections.

Having breakfast with such views feels like a scene from a movie. The Swiss yogurt is incredibly tasty and feels very healthy.

We took many photos and filmed a lot. After our delightful breakfast, we strolled around to admire the beautiful village, enjoying the fresh air and stunning mountains, all just a few minutes' walk from the Coop supermarket. Geneva Christmas Market 2025 - The OLDEST Brasseries Lipp Restaurants in Switzerland Delicious OR Tourist Traps?


Our first time in Geneva, Switzerland, and we are super hungry, so we’re planning to indulge in some delicious, big meals. The restaurant we’re heading to is Brasserie Lipp Genève, which has been around since 1986 and is a true gem of French cuisine.

The atmosphere is warm and elegant. A big bottle of Evian or sparkling water costs 12.50 Swiss franc, so you might as well order a jug of beer instead.

The bread is freshly baked daily and is free, plus you can ask for some butter. While enjoying the beer, take a look at the menu; dining out in Geneva can be pricey, especially for quality food.

Brasserie Lipp in Geneva tends to be on the pricier side due to its iconic status, historical Parisian connections, prime location, and the high-quality, classic brasserie experience it provides. The overall elevated cost of living and dining in Geneva, Switzerland, also contributes to the premium prices for a refined, traditional meal.

We've ordered 3 different types of fresh oysters as a cold starter.

1) Gillardeau 7.20 Swiss franc

It's famous for their exceptional quality, rich, sweet flavour, plump texture, and distinctive laser-engraved "G".

2) Ostra Regal 6.90 Swiss franc
It's nutrient-rich waters of Bannow Bay, Ireland, known for their distinctive, crisp texture, sweet finish.

3) Boudeuse 4.60 Swiss franc
It's round, slow-growing French oyster from the Marennes-Oléron region, known for its surprisingly sweet, crisp flesh, rich flavor, and firm texture hidden inside a small shell.

After we finished our starter, it wasn't long before our main dishes arrived all at once, and they stayed nice and hot until the end.

We were super satisfied with these delicious, huge meals. We had a massive portion of Veal chop Milanaise for 55.70 Swiss franc and Choucroute de la mer for 49.99 Swiss franc, plus an extra 1 for bacon at 3 Swiss franc and a side of rice for 7 Swiss franc.

Two people enjoying a big, tasty meal cost us 153.60 Swiss franc. Be cautious, the main dishes as this is an exceptionally large portion.

December is the month of Christmas, when everywhere is beautifully decorated, fostering a festive holiday spirit. We are eager to explore Geneva's Christmas Market: charming stalls, delicious food, sparkling lights, interactive activities, and all the components of a wonderful holiday experience.

Geneva Christmas market is referred to as NOEL AU QUAI.
Also in Geneva, French is the main language spoken.

In Zurich, Switzerland, most of the population speaks Swiss German (Schwiizerdütsch), a dialect of German.

I enjoy walking and discovering new sights, particularly during this holiday season. The Christmas spirit is everywhere, and it feels wonderful.

Just a 9-minute walk from our Hôtel National Resort & Spa in Champery, a stunning Swiss alpine village that we searched for over a year. I will be uploading a room tour in the next video. Now, we are finally here on the morning of day two at Coop. It had everything we needed for a 4-day stay in this marvellous Swiss Alps village.


This is the chocolate I adore, Halba pistachio chocolate. I enjoy both the dark and milk varieties of Halba Pistachio Chocolate. It is the finest pistachio chocolate I have ever experienced. It is truly my favorite, whether paired with coffee or Guinness. This popular Swiss delicacy features smooth Swiss chocolate (both milk and dark) filled with crunchy, caramelized, and salted pistachios, providing a delightful mix of creamy, sweet, and savory flavors in every bite, a hallmark product from Chocolate Halba.

I am genuinely thrilled to have discovered the world's best pistachios. This is the one you must purchase if you love pistachios; it is incredibly fresh, delivering an extraordinary pistachio flavour that is out of this world. They are so crunchy, with no salty or burnt taste, and in all the packs, you won't find a single one that is burnt or spoiled. These are the perfect pistachios I have ever tasted in my life.

I am truly delighted to have found my favorite pistachios and pistachio chocolate that is not overly sweet, yet of high quality. It is worth the price due to its premium quality and the world's best pistachios. Everyone should try it; I highly recommend it.

The place was clean and well-organized, conveniently located within walking distance from our accommodation in the heart of the Swiss village. Additionally, the staff seemed very friendly. We are spending 4 days in Champéry, which is extremely convenient for us.

Vaya bean salt snacks are my favourite; they aren't overly salty but are incredibly flavorful, with a delightful bean taste. They are so crunchy that I can't stop eating them. They've now become one of my favourite crisps, and I must buy them whenever I visit Switzerland.

I've observed that the ice cream in Switzerland is exceptionally delicious. It must be made from high-quality, fresh milk and natural classic flavours; it truly is impressive.
It brings me immense joy to be with my loved ones. This is our first experience of enjoying ice cream in front of the Swiss Alps on a snowy day. Surprisingly, we don't feel cold at all, and it creates such memorable moments.

You should definitely try it when you're in Switzerland; it's a fun experience that you will cherish forever. As we stroll towards this Swiss village, each step is a delightful experience, and the snowy mountains are breathtakingly beautiful.

The air is refreshingly crisp, and the tap water tastes as fresh as mountain spring water, so pure. The water is as sweet as the air, and I feel so fortunate to spend four days here, savouring every moment without any rush, simply slowing down to embrace a peaceful life. It truly is a luxurious escape from home, allowing me to take a much-needed break. Thank you for operating this store in our holiday destination!

We are truly enjoying our time on the balcony of our room, taking in the views of the Swiss Alps while indulging in all the snacks we purchased today. This experience has been delightful, and we feel refreshed trying as many local snacks as possible. It’s all about relaxation, allowing us to sleep early and wake up early, as an early start enables us to accomplish many things.

After sampling various snacks, we can now identify which types we enjoyed and plan to buy many of them when we visit Coop in Geneva, bringing them back to the UK. I hope you find this video helpful. Upon returning to the hotel, we felt the urge to relax on the balcony and sample all the snacks we had purchased.

The views remained pleasant, even though they were shrouded in fog. Oh, I almost forgot to mention the ice cream we enjoyed; the mango and passion fruit flavours were incredibly fruity and not overly sweet. It was delicious, showcasing the natural taste of both mango and passion fruit. We savoured every bite, and the ice cream never melted a single drop, making it quite refreshing.

In contrast, the chocolate almond ice cream was distinctly different from the ones in the UK; the Swiss varieties are truly the best of the best, exceptionally fresh.

Over the past three years, I've experienced a lot of changes. I've slimmed down by 10kg. Even though I wasn't obese three years ago, losing 10kg makes a significant difference in my appearance. I'm not sure if you've noticed it or not? Now I can enjoy more snacks again!  

This is the world's best Coca-Cola, available only in the hotel room fridge. It comes in a glass bottle and is a specific brand that I can't find at Coop or anywhere else. It's my favourite Coca-Cola in Switzerland.

First Time Snowboarding - Skilling Injuries in the Swiss Alps 🇨🇭

This is the scenario we aim to prevent. Nonetheless, I feel it is important to update you on the circumstances unfolding behind the scenes. I have suffered an injury to my chin and I was concerned that I might have fractured a bone when I heard the sound. My mind is preoccupied with the thought that I have spoiled the holiday. I will be admitted to the hospital and might need plastic surgery to fix my chin in the near future. At that moment, I feel extremely frightened and anxious about it.

We had an amazing stay at a 5-star hotel in Villars-sur-Ollon, which proudly holds a michelin key. The Villars Palace is not merely an elegant establishment with breath-taking mountain vistas; it represents an excellent blend of modern hospitality, education, and environmental sustainability. Proximity to the ski resort and the cable car that transports you up the mountain is a significant advantage. The hotel provides a ski-to-door service, so their driver will take you to the nearby ski resort, and when you’re back, just give them a call and wait a few minutes. This really shows their commitment to excellent customer service.

The Gryon Ski Area is conveniently located just a brief 3-minute drive or a 10-minute walk from this location. At the Gryon Ski Area, which is part of Les Diablerets/Gryon, you can purchase half-day passes for either the morning or afternoon sessions. The cost of half-day ski passes may vary, but you can generally expect to pay approximately 49 CHF for adults. They offer morning sessions (such as 8:30-12:30) and afternoon sessions (like 12:30-16:00). I'm not really into sports, and this is my first time skiing. As the new year begins, I am really thrilled to embrace new experiences and feel full of energy.
I figured it would be a piece of cake. However, I found myself repeatedly falling down, as demonstrated in this video. To be honest, everything is amusing, I actually find it quite funny, and I haven't felt any discomfort at all from the start. Starting to learn skiing in a group is a wonderful way to gain confidence with support. Alternatively, a private ski lesson is priced at 75 CHF. If you want to add another person, it will only cost an additional 10 CHF, making it 85 CHF for a one-hour private ski lesson.

I thought I could ski proficiently, so I descended rapidly but ended up falling uncontrollably, resulting in considerable pain to my chin and chest.

I was extremely frightened, fearing I had fractured my chin bone, and I could taste blood in my mouth and nose.

I remained there unable to move for at least five minutes, overwhelmed by the pain. I was also anxious that my life would be entirely different from that moment onward. I will remember this error, as we all learn from our mistakes, right?

I'm too rushed to absorb new skilled. Avoid showing off when first. Take time and don't hurry. Watch the professional skiers around and focus on who has more skiing skilled than you. ItalyPaul technically my private ski instructor, but I initially didn't heed his advice. Now I recall that when someone more knowledgeable than you takes on the role of teacher, it's best to remain silent and learn at a steady pace, without rushing.

ItalyPaul was quite adept at skiing during his teenage years in Australia, and he once shared a video tape with me that he had recorded using his camera. At that time, I had no interest in sports, so we didn't communicate or engage in any sports until recent years; I have changed significantly. Unfortunately, the memorable video tape recorded with the camera was stolen during a burglary at our former residence.

Oh, Paul knows how to ski, but I always remind him to avoid skiing too fast to prevent any unnecessary emergencies.

As you mature and grow older, forming close relationships with your loved ones, best friends, or a cherished partner can truly transform you.

I understand that everyone desires to be your own unique self. However, there are times when you may wish to explore new experiences, even if they don't initially pique your interest. Embracing new challenges in life is always worthwhile.

Today feels like a dream. I never imagined that I would get into sports and start skiing in the snowy mountains in my favourite countries Switzerland; it truly feels incredible to me.

We got flight insurance and ski insurance to cover us for emergencies and accidents. This is super important, especially when doing risky sports overseas.

I found out that I had soft tissue injury, my chin still hurt but I know it's not serious since it's improving. If it worsens, I will definitely call for it emergency help, as we already purchased a ski insurance which is crucial for covering all medical expenses.

After that, I spoke less, rested more and eat slowly.

Can you guess how long we've been skilling? We're feeling quite tired, so we've decided to take a break at Rocco Cantina Italiana, Villars-sur-Ollon restaurant.
The price is exactly the same as what you'd pay for a basic cup of tea in a café or restaurant in Switzerland. Two large cups of Jasmine green tea, cost around £10 - £12 altogether. I can't really recall the exact amount. It has an authentic, fresh flavour, and provides a comfortable. It's delightful to relax with a cup of Jasmine green tea. It's always been my favourite, especially in the coldest days. I sipped it. carefully to avoid touching my lips. Unfortunately, I improved day by day and the sixth day I was completely healed.

If you were in my position, would you choose to go on a ski holiday again?

 ''For those new to skiing / snowboarding, it's important not to rush or try to show off. Playing at a slower pace is a safer approach, especially if you haven't taken a ski lesson''.

The staff at Villars Palace are consistently warm, friendly, and exceptionally helpful and attentive to hotel guests.

His name is Gurbun, and he provides top-notch service worthy of a 5-star Michelin rating; he is truly an asset.

Typically, I keep the behind-the-scenes aspects hidden, focusing on the positive side, but in reality, life encompasses both good and bad.

I used to be concerned about others laughing at me for my lack of knowledge, but I've since transformed my perspective. Now, I find humour in my journey and believe we should embrace new experiences, transitioning from the unknown to the known. It's truly an incredible experience in life.
